But wait... what does that mean?
First off, we do not add laboratory cultured yeast to ferment our beer. We simply cool the wort naturally in a coolship. Amazing yeast & microflora are all around us! That's why we're in Tillamook!
After the wort cools, we transfer everything to oak barrels (some big, some small, some medium). Each beer takes it's own time in barrels to finish fermenting.
Most of our beers take anywhere from 6 months to 5+ years in barrels before we package them.
Every bottle is naturally conditioned and ready to be enjoyed when we release it. Although the beer can age, please note the fruit and hop additions will dissipate with extended time.

Batch 1. 750ml bottle pours a very hazy pink with some cloudy, bright white head. Nose is really nice, cranberry, a little raspberry, some yogurt, some lime, some champagne. Flavor is solid, tart berry, yogurt, a nice level of acidity, a little hay, lemon lime soda, ginger. Tart but refreshing finish. Excellent.

Bottle. Poured a murky brown color with a wispy off-white head. Some light malts, with some vineous, woody notes, some funky sour notes. Flavor is light wine sour notes, touch of light wood. Nice.

Bottle courtesy of GT2, thank you GT! Poured a lovely ruby-pink color with a wispy white head. Aroma is nice grapefruits, tropical notes, some cranberry. Taste is a real tart one, notes of cranberry, tartness is quite good. This is easy to drink and quite good.

Bottle courtesy of GT2, thank you sir! Beautiful hazy pinkish red color, white edge head. Taste has grapefruit, light pineapple, subtle cranberries. Taste is softly sour berries with a tart cranberry finish. Very tasty.

Bottle - Sour berry and grape, with little bit of oak. Cloudy orange with a thin head. Vinous and caramel sugars with a bit of oak. Nice and mellow.

750mL bottle, pours a murky amber brown with almost no head. Aroma brings out loads of red fruits, light red wine barrels, and wild yeast - very inviting. Flavour brings out loads of juicy red fruits, light-to-medium red wine barrels, and wild yeast. Dominated by the red fruits, only lightly sour. Finishes fairly wild and vinous on the finish. Quite well-integrated, with all the elements meshing well. Not the most complex, however. Good stuff, just nothing exemplary.

Rather tasty considering the wild yeast allowed in. Light coffee and malt aroma. Flavour is malt and coffee with a tart finish. Dark black/brown with thick beige head. Draft

On tap at the Tin Bucket. Pours a cloudy yellow with no head. A huge sour and fruit nose with lemons and citrus. The flavor is tart lemons, big woody sourness, lactic at times, very much like really tart raw pineapple or lemon juice. Easygoing of course. Quite nice.

On tap at The Beer Mongers, pours a cloudy golden orange with a small white head. Aroma is super dry and yeasty, with loads of farmhouse notes, unripe stone fruits, and dry zesty biscuity malts. Flavour brings out a very dry and zesty set of flavours, with dry citrus zest, some farmhouse notes, some floral hops, and some biscuity malt. Not sure if classify this as a DIPA, but rather some bizarre wild farmhouse beer. Solid, but off-kilter hop bomb.
