But wait... what does that mean?
First off, we do not add laboratory cultured yeast to ferment our beer. We simply cool the wort naturally in a coolship. Amazing yeast & microflora are all around us! That's why we're in Tillamook!
After the wort cools, we transfer everything to oak barrels (some big, some small, some medium). Each beer takes it's own time in barrels to finish fermenting.
Most of our beers take anywhere from 6 months to 5+ years in barrels before we package them.
Every bottle is naturally conditioned and ready to be enjoyed when we release it. Although the beer can age, please note the fruit and hop additions will dissipate with extended time.

Bottle, big thanks to Bruce! It pours hazy rose with small off white head. The nose is earthy, barnyard, car litter, must, touch of fruit and oak. The taste is crisp, tart, sherbet, cranberry, some acidity, chalk, wood, floral and barnyard with a dry finish. Medium body and fine, prickly carbonation. Can’t say I’m a great fan of the musty smell, but it sure tastes nice.

Fare thee well Josh tasting at Bruce’s. Thanks to Bruce again! Hazy orange - red beer, small pink head. Mild rasberry snout. Palate is light, crispy and a little dry. Light fresh raspberry and tart sherbet. Finishes light and crisp. Refreshing is somewhat one note.

Fare thee well Josh tasting at Bruce’s. Hazy pale purple - pink beer, tiny pink head! Palate is crisp and dry. Minerals. Dry chalky sherbet, tart but very thin blueberry. Finishes crisp. Tickles the tastebuds but the fruit is very thin.

On tap at Orenco Taphouse. Pours a dark murky color with a small white head. A big slightly sour juniper nose with roast. The flavor is dominated by gin, juniper is huge, sour lacto, a bit of roasted malts, some metal. Pretty good beer. Actually fairly mellow.

375mL bottle labeled as 11.5% ABV. Aroma has a medium oak and bourbon note. Moderately strong dark fruit notes. Light chocolate and roast character, but the fruit mostly overpowers the malt notes. Dark fruit is plum, fig, red grapes, berries and cherries. Pours dark brown, almost black with a half finger, fairly thin, light mocha head that recedes quickly to the edges where it lingers slightly. Faint lacing and medium long legs. Flavor is surprisingly tart with only a hint of sweetness. Medium oak note but only faint bourbon. Medium light roast and light chocolate character. Moderately strong dark fruit notes. Dark fruit is mostly berry and cherry, but also quite a bit of plum, fig and prune. Surprisingly light alcohol spice in the finish. Mouthfeel is medium full bodied with medium carbonation. Low astringency and medium alcohol warmth. Overall a pretty enjoyable beer, with a ton of fruit character. The alcohol spice is well hidden, but there is a bit of alcohol warmth. As I have mentioned in previous reviews, I am not a huge fan of dark sour beers even when they are well done like this one is. The oak is well balanced and bourbon isn’t offensive.

Bottle shared at Josh’s Farewell Hoorah - big thanks to Bruce my OR beer pedler, 20/02/14. Lightly hazed cherry red with a good sized crimson covering that soon dissipates. Nose is tangy berry fruit medley, tarte raspberry, faint smoke, bitter fruit mash. Taste comprises sharp raspberry, light blueberry friends in the mix, straw, light smoke, sherbet berry dabs. Medium bodied, fine carbonation with light spritz keeping it an easy drinker. Solid Berliner, solid De Garde once again!

Bottle shared at Josh’s Farewell Hoorah - big thanks to Bruce my OR beer pedler, 20/02/14. HAzed crimson come pink with a moderate off white covering that clears to spotting. Nose is tarte berry fruit, tangy bluberry, straw, raspberry syrup. Taste comprises tangy blueberry, tarte red berry medley, straw, light acidic notes. Medium bodied, fine carbonation, crisp clean finale. Solid refreshing berry fruited up Berliner.

Bottle, big thanks to Bruce. It pours clear red with a minimal white head. The nose is sweet raspberry, candy, barnyard, funk, light manure and assorted zoo smells. The taste is crisp, tart, raspberry, sherbet, mild acidity, Granny Smith apple, barnyard and some graininess in the background with a dry, tart finish. Medium body and prickly carbonation. More body than the blu blu which is definitely an improvement. Crisp, tart and damn delicious. Very nice.

Big, juicy raspberry aroma, suggestions of berry tartness. Light-medium sweet flavor with rich raspberries, hints of raspberry pit bitterness, jammy berries, suggestions of poopy barnyard, mild acidity. Medium bodied with fine, massaging carbonation. Pretty clean to finish, buckets of tart raspberries, light berry preserves, subtle funk, cleansing acidity. Lovely beer.

Bottle shared in London during Josh’s going away bonanza. Thanks to Bruce for this one. Pours lightly hazy pink-red with a mellow, white foam head. Tart berry nose, some blueberry skins, faint herbs. Light sweet flavor, very clean, plenty of lightly tart blueberries, faint acidity. Light bodied with fine, spritzy carbonation. Exceedingly clean on the finish with quick blueberry tartness, low acidity. Very, very drinkable.
