But wait... what does that mean?
First off, we do not add laboratory cultured yeast to ferment our beer. We simply cool the wort naturally in a coolship. Amazing yeast & microflora are all around us! That's why we're in Tillamook!
After the wort cools, we transfer everything to oak barrels (some big, some small, some medium). Each beer takes it's own time in barrels to finish fermenting.
Most of our beers take anywhere from 6 months to 5+ years in barrels before we package them.
Every bottle is naturally conditioned and ready to be enjoyed when we release it. Although the beer can age, please note the fruit and hop additions will dissipate with extended time.

Sample, bottle, drunk with the brewer, New Belgium Night at Bailey’s Taproom, trip to Portland (Oregon), savoured on January 18 2014; eye: blonde, hazy, nice effervescence, voluminous white head, nice lacing; nose: floral hops, light wild yeasts, slight juniper, slight pine; mouth: floral hops, light wild yeasts, slight juniper, slight pine, finale in floral hops with light presence of juniper, medium body, average carbonation, slick texture; overall: superb surprise FRANÇAIS Échantillon, bouteille, bue avec le brasseur, New Belgium Night chez Bailey’s Taproom, savourée le 18 janvier 2014; œil : blonde, voilée, bonne effervescence, mousse blanche volumineuse, bonne dentelle; nez : houblon floral, léger levures sauvages, très léger genièvre, très léger pin; bouche : houblon floral, léger levures sauvages, très léger genièvre, très léger pin, finale en houblon floral avec légère présence de genièvre, corps moyen, carbonatation moyenne, texture coulante; en résumé : superbe surprise

Hazy orange with a small white head and some lacing. Aroma is very acidic, floral, ripe fruit and cheese. Taste is acidic, throw up, woody and lemon

Bottle thanks to Bruce. Pours a cloudy orange with medium frothy head that lasts. The aroma is strong hop, lemon zest, oak, funk. Thin mouthfeel with nice light citrus hop and light sourness. Easy to drink, really enjoyed this.

Bottle pours with a murky mahogany colored body that supports a tan head. The aroma offers up soft vinegar, sweet malts, some sort of cherry fruitiness and then coffee notes banging around in the background. The taste is similar with malty tart vinegar mixed with funky notes and then more vinegar taking hold to midway. Like in the nose I get some coffee notes murmuring about in the background. There is no sense at all of the huge ABV here.

Bottle pours with an amber colored body that supports a tan head. The aroma offers up some dark roasted malts, funky bigness that has an edge of fungus blue cheese, bad feet and vinegar. The taste starts with malt sweetness, some malty sweet soft vinegar and then a fruity apricot note. Not bad and I can’t see how this is any higher than say 7% ABV. Alcohol very well hidden, wow.

Bottle shared at the 2014 tasting in the Cellar of Moeder Lambic Saint-Gilles. Pours hazy red with an off white head. Aroma of tart red fruits, light funk and vinous aspects. Flavor is light sweet and over heavy heavy sour. Medium bodied with moderate carbonation.
