But wait... what does that mean?
First off, we do not add laboratory cultured yeast to ferment our beer. We simply cool the wort naturally in a coolship. Amazing yeast & microflora are all around us! That's why we're in Tillamook!
After the wort cools, we transfer everything to oak barrels (some big, some small, some medium). Each beer takes it's own time in barrels to finish fermenting.
Most of our beers take anywhere from 6 months to 5+ years in barrels before we package them.
Every bottle is naturally conditioned and ready to be enjoyed when we release it. Although the beer can age, please note the fruit and hop additions will dissipate with extended time.

0,75l bottle from Drikbeer advent calendar, #9. Bottled 11/21. Clear golden amber beer with good and stable head. Aroma is oak, yeast and cognac. Flavour is oak barrel, citrusy fruits and woody tart notes. Light body, easy, good balance between sweet and sour notes.

Bottle, 750 ml, shared with Luka, MiroB and Bojan. Batch 12/23. Hazy yellow with white head. Loads of peaches, some funk, juicy, citrus. Medium sourness. Nice soft texture. Very nice.

0,75l bottle at home. Dark Red color, small pink head. Smells basil, berry notes, spices, coriander. Lovely smell. Full body, soft carbonation. Tastes berry notes, blackberries, herbal, spices, basil, rather bitter. Finishes lightly dry and lightly sour and rather bitter with notes of basil, herbal and berry notes. Love this one, super unique, great combination of sour and bitter

Dark red body, with a big, creamy, pink head.
Lovely aroma of jammy blackberries, basil, wood, some citrus. Tastes similar, while more bitter and dry.
Medium mouthfeel, with an average carbonation. Finishes dry, quite bitter, wooden, fruity, a bit vinous, with basil.
Amazing stuff! Such a unqiue character, while the berries and the basil work suprisingly well together, this is like something Antidoot would do.

0,75l from bottle at the brewery. yellow almost clear color, medium white head. smells flowery, grapes, light sweetness, honey, lovely smell. full body, bubbly carbonation. tastes grapes, light sweetness, earthy, stone fruits, rather white wine forward, obvious riesling. finishes lightly sweet with notes of riesling, grapes and light stone fruit notes. nice one, a bit on the heavy side, rather bubbly, good, rather wine forward.

Draft pour to a tulip, enjoyed at Elliott Bay Pizza. Dark grape juice reddish purple, bright hot pink foam. Jammy aroma, tart mixed berries. Intense tart front that slowly smooths out. Some wine grape, dry finish. Moderate acidity, some oak, sour sharp finish. Really unique brew. Been a while since I've come across one from these guys, and I instantly miss it. Very good one here.

Sample (thanks fonefan!). Slightly hazy golden colour with a small off-white head. Aroma is dried fruits, some mild tart wooden tones with a wee bit of sweetness from the hops, malts and maybe some vanilla. Flavour is tart, some floral, leathery and mild vanilla tones with quite a spiciness kicking in too.

Bottle. Poured a clear orange color with a large white head. Aroma was funky brett, grapefruit. Light malt, touch of grain. Funky, delicate yeast. Pleasant stuff.

750ml (thx, Phill!) @ Sales Force. Appearance: very dark purple with a dark rose head. Looks amazing. Aroma: dry, intense dry framboise, some sweetness. Taste: along the same lines, a lot of dry raspberries, oak notes. Overall: pretty good for what it is, but it went too far in terms of dryness. At least it is not acidic.
