But wait... what does that mean?
First off, we do not add laboratory cultured yeast to ferment our beer. We simply cool the wort naturally in a coolship. Amazing yeast & microflora are all around us! That's why we're in Tillamook!
After the wort cools, we transfer everything to oak barrels (some big, some small, some medium). Each beer takes it's own time in barrels to finish fermenting.
Most of our beers take anywhere from 6 months to 5+ years in barrels before we package them.
Every bottle is naturally conditioned and ready to be enjoyed when we release it. Although the beer can age, please note the fruit and hop additions will dissipate with extended time.

Opaque, scummy looking head. Light brett, some weird ropey funk. Decent, with mild tartness. Medium body.

Pretty clear deep purple beer, practically no head. Aroma: blackberries, black currants, dark cherries, very rich. MF: ok carbon, medium body. Taste: nice, pretty acidic start, very bitter, lots of blackberries and black currants, sourish, quite some tannins, earthy, dry and acidic. Aftertaste: acidic, bitter, lots of tannins, earthy, hoppy bitterness it seems, more acid. No vinegar though as I’ve had with other De Garde beers in the past.

Very well balanced. Tart fruit. Almost like wine. Dry finish. Lots of barrel.

Pleasant low booze sour beer. Grapefruit Nelson adds to grapefruit bretta for double grapefruit. Golden pour with ok head. Tart finish, goes great with spicy Dan Dan noodles.

From tap at APEX, Portland. Aroma is sour and tart raspberry with notes of oak and a funky touch. Nicely puckering sour flavour with a long tart raspberry finish. Body is medium. Wow, wonderful Raspberry Sour!

Bottle from The Beer Mongers, Portland. Aroma is oaky and fruity with citrus, peach, apricot, soft Brett funk, grape, lemon, Flavour is medium sour and tart with a dry finish. Medium bodied. Delicate and lovely citrussy oaky apricot Sour.

Аромат очень кислый, это сразу ощущается. Конечно персики в основе, есть дикие дрожжи. Цвет желтый полу мутный. Вкус дико кислый, аж скулы сводят, есть намеки на виноград как будто. Немного жрожжей снова и сильная карбонизация.

From tap at Other Half, New York. Fruity aroma with barrel notes, funk, grape skin, vinegar, touch of tart stone fruits, hint of vanilla. Mild acidic sour flavour, dry finish. Medium body. Really good barrelled Wild Ale.

From tap at Other Half, New York. Loads of tart and sour cherries in the aroma, with oak, light funk, and a hint of vanilla. Puckering sour flavour, medium body. Really damn tasty.
