But wait... what does that mean?
First off, we do not add laboratory cultured yeast to ferment our beer. We simply cool the wort naturally in a coolship. Amazing yeast & microflora are all around us! That's why we're in Tillamook!
After the wort cools, we transfer everything to oak barrels (some big, some small, some medium). Each beer takes it's own time in barrels to finish fermenting.
Most of our beers take anywhere from 6 months to 5+ years in barrels before we package them.
Every bottle is naturally conditioned and ready to be enjoyed when we release it. Although the beer can age, please note the fruit and hop additions will dissipate with extended time.

Deep dark purple colour. Black raspberry indeed. Medium pink head. On the nose, it has a lot of raspberry. On the palate, the berry is quite rich, and it has a juicy tartness. Rich fruit character, not sure what to make of the base because I can't really get much out of it the fruit is so intense.

Poured from 750mL bottle. Dark purple with full bright dark pink head. Dry earthy raspberry, almost a slight vinous tannic quality. Looks amazing, aroma and flavour is just decent.

Pours clear, medium colored blond. Small white head. Scent is full, plastic, amlam. Sherry is hidden. Taste is aggressive, both in carbo and acidity. Hidden sherry and sweetish fruity (red fruit) aspect. not very refined.

750ml bottle pours out golden topped with a fizzy white head. Nose is nice sweet jammy peach notes a great tart sour touch and some vanilla Rum barrels. Taste is more of the nice sweet peach notes tartness Rum barrels wow

Sampled from the tap at Northern Taphouse. Pours a clear pinkish light red with a white head that dissipates quickly to the edges. Aroma has a rich tart cherry with a bit of bitterness with a bit of oak supporting. Flavor has a bit of pie cherry but mainly tart with a bit of oak coming through.

Lots of gin in the nose. It hits hard, then disappears. Which is good because I'm not a fan of gin. It comes on with juniper, then it dies--it's like it's just there in the smell. Pours golden without much head and lacing. Light tart finish. Pretty drinkable. Snally.

Super light, subtle, nice balance. Lemon, grapefruit. Golden pour with good head and lacing.

750ml bottle pours a mostly clear orange with a big cap of white head. Nose has oak and Brett and grapefruit, some malt or cracked grain. Flavor is well balanced with Brett and grapefruit. Really nice yeast character. It works well with the grain bill. Basically dry, medium full bodied. Really well balanced.

Poured from a 750 ml bottle. Aroma is somewhat fruity with notes of grapes, apricots, and cherry. Moderate herbal, funky notes and some light oak notes. A bit of a lemon note. Light grain and alcohol notes. Pours a slightly hazy, copper-orange color with a large, fairly thick, frothy, white head that recedes slowly to a small film that lingers. Flavor is somewhat acidic and a bit sharp, but not terrible. Light grain notes. Medium low bitterness and light alcohol notes. Medium light notes of apricot, cherry and grapes with some light lemon notes. Hints of herbal funk and oak. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a solid de garde beer. A bit on the sharply sour side but not strongly sour. The herbal note in the aroma.doesnt quite mesh with the fruity notes, but it fine in the flavor.
