But wait... what does that mean?
First off, we do not add laboratory cultured yeast to ferment our beer. We simply cool the wort naturally in a coolship. Amazing yeast & microflora are all around us! That's why we're in Tillamook!
After the wort cools, we transfer everything to oak barrels (some big, some small, some medium). Each beer takes it's own time in barrels to finish fermenting.
Most of our beers take anywhere from 6 months to 5+ years in barrels before we package them.
Every bottle is naturally conditioned and ready to be enjoyed when we release it. Although the beer can age, please note the fruit and hop additions will dissipate with extended time.

Tap @MBCC 2024, Blue Session. Cloudy golden, white head. Malty, sweaty overripe peach aroma. Sourish flavour, more peach, a little vanilla perhaps, some rough funk.

Nice fizzy shortlasting head, hazy dark purple color. Aroma is slightly dry fruity, herbs, sour dark berries, leafs, oak, flowers, berry skin, mild vinegar, vanilla, grass. Taste is dry sour-ish fruity, berry skin, oak, herbs, leafs, grass, flowers, sour dark berries, mild vinegar, fruit salt, hay. Medium bitterness, dry sour-ish fruity mouthfeel. Nice.

Tap @MBCC 2024, Yellow Session. Cloudy pale golden, white head. Citric overripe fruit aroma. Sweet, sourish flavour, more ripe fruit, some funk. Light.

Bottle pour at Farmhouse Fest 2024. Pours cloudy yellow with white head. Aroma has loads of old dry wood, dried citrus. Flavour has good dried citrus, quite stringent overall. Pretty solid, but definitely dry and stringent overall.

Bottle pour at Farmhouse Fest 2024. Pours cloudy yellow with minimal white head. Aroma has fruit, I guess. Flavour has a stringent bitterness, some peach underneath, maybe. Leans too heavily into to bitter sour notes.

On tap at Imperial Bottleshop. Pours cloudy yellow with a white head. Aroma has wild yeast, peaches, and vanilla. Flavour has sour peaches, rustic wild yeast, dry floral notes, dry wood, and bugs. Solid peachy saison, lots of rustic notes. Well done.

750ml bottle at share. Golden pour, scant head fades quickly. Nose is very tart, piquant, fruity, stone fruit. Taste mellows a bit, very fruity, stone fruit, but the tartness rises at the back with a little dryness. Well balanced

Bottle pour at FHF 2024, pours a hazy bright golden with a small white head. Aroma has some petroleum, barnyard funk, leather, and intense wood. Flavour is very woody, with lots of leather and wood, bitter astringency and some funk. Leathery, bitter and woody. A bit sharp but it's pretty tasty — certainly not reminiscent of a lambic.
