But wait... what does that mean?
First off, we do not add laboratory cultured yeast to ferment our beer. We simply cool the wort naturally in a coolship. Amazing yeast & microflora are all around us! That's why we're in Tillamook!
After the wort cools, we transfer everything to oak barrels (some big, some small, some medium). Each beer takes it's own time in barrels to finish fermenting.
Most of our beers take anywhere from 6 months to 5+ years in barrels before we package them.
Every bottle is naturally conditioned and ready to be enjoyed when we release it. Although the beer can age, please note the fruit and hop additions will dissipate with extended time.

Appearance - 6 | Aroma - 6 | Flavor - 7 | Texture - 8 | Overall - 7.5
Amber, slight haze. No head. The aroma has a bit of nail polish phenols coming out, along with leathery notes. The palate again has a leathery note, some tannic accents, medium acidity. Not getting that nail polish. Decent body. Moderate complexity, light bitterness, and the finish is quite tannic. Seems like it has some age, which adds something to it, a little fruitiness.

750ml @ Matt's (thx for the bottle!) new place. Appearance: hazy golden with almost no head. Aroma: pretty nice wild yeast notes, oak, and some fruity notes. Taste: along the same lines, very weird bitterness, nice stone fruits notes. Overall: interesting.

750mL bottle, pours a hazy golden with a tiny white head. Aroma brings out gentle oak, some wild yeast, and a touch of lemon skins. Flavour is full of oak, a touch of phenols, wild yeast, lemon tang, finishing again on dry oak. Simple but pretty well-made -- nice oaky finish.

Tap. Pours clear candy apple red, medium pinkish white head, good lacing. Aroma is cherry and funk, basement, horse blanket. Flavor is light plus tart, medium funk, nice berries. Medium light body.

Bottle. Pours a hazy gold with small white head that lasts. The aroma is peach flesh, cinnamon, oak, vanilla bean. Thin body, tart peach, light cinnamon, light vanilla, light acidity, enjoyed this.

750mL bottle, pours a cloudy orange with a large white head. Aroma is exquisite, with complex oak barrels galore, lots of wild yeast, and some champagne-like effervescence. Flavour is loaded with complex oak, lots of wild yeast, and champagne-like effervescence. Tons of oak and wild yeast on the finish. Beauty.

Bottle. Pours a cloudy dark purple with medium pink head that lasts. The aroma is funk, wood, berry, earth. Slick body, funky, jammy berry, wood, sherry, nice sweetness, enjoyed this.

Flavour has plenty of white pepper, great barnyard funk, gentle acidity, and oak. Really super blend, finishing funky and peppery. Excellent.
