But wait... what does that mean?
First off, we do not add laboratory cultured yeast to ferment our beer. We simply cool the wort naturally in a coolship. Amazing yeast & microflora are all around us! That's why we're in Tillamook!
After the wort cools, we transfer everything to oak barrels (some big, some small, some medium). Each beer takes it's own time in barrels to finish fermenting.
Most of our beers take anywhere from 6 months to 5+ years in barrels before we package them.
Every bottle is naturally conditioned and ready to be enjoyed when we release it. Although the beer can age, please note the fruit and hop additions will dissipate with extended time.

Bottle. Pours black with no head. The aroma is strong chocolate, roast, wood, licorice. Slick body, dark fruit, licorice, chocolate, alcohol present but not overpowering, very nice.

Thin cherry. Ruby red pour with decent head. Light tart finish. Tap at Soverign.

Sample at the roost pours a clear burnt gold with some white head. Nose has lemon rind, funk, neutral barrel. A little plastic. You can tell it's new world. Flavor nears authentic but there is a residual sweetness that isn't right and doesn't even remind of Boon. Sourness and funk are both dialed back. Some bandaid but whelming at best. Finishes medium bodied, lightly creamy and the malt oddly shows up. Weird. Maybe bottle treatments are better?

Pours clear deep red with minimal white head. Aroma funky and berry. Flavour tart and a bit dry; sour grape and blackberry. Tannins from the grape skins.

750mL bottle, pours a deep dark mahogany with a medium pink-tinged beige head. Aroma is loaded with red grapes, oak, some wild yeast, and a touch of pepper. Flavour is dry, with lots of red grapes, oak, tannins, wild yeast, a touch of black pepper, and gentle spicy phenolic notes.

Bottle. Pours a cloudy orange gold with medium frothy white head. The aroma is strong funk, oak, apple skin, yeast. Medium body, funky, wood, lemon, apple, dry finish, very nice.

Bottle. Pours a hazy orange ruby with small white head that lasts. The aroma is strong funk, wood, grape skin. Medium body, funky, oak, earth, grape, light tartness, dry finish, enjoyed this.

750mL bottle, pours a ridiculously intense jet black / dark purple with a small purpleish pink head. Aroma is intense, with loads of intense, dry, jammy black raspberries, super dry oak, and some wild yeast. Flavour is nearly bone dry, with intensely jammy and bone dry black raspberries, plenty of oak, and a touch of wild yeast. I think it's actually a touch too dry given the fruit character, as there's clearly an absurd amount of fruit in here. Super viscous and rich, but yeah, super dry. Very good regardless of it being too dry.
