Description
It all began with a 27 year old brewer, a windowless apartment, and a mountain of credit card debt. Phillips’ first brews were about as unconventional as his financing structure. In the conservative beer climate of 2001 the brewery launched with an Espresso Stout, a Raspberry Wheat Ale, and a boldy-hopped IPA; a suitable foreshadow for the creativity to come.

Since then Phillips has moved out of the apartment and into a more brewing-appropriate facility (with windows) closer to town. We have launched a soda company, a distillery, and most recently a malting facility–the only one of its kind in Canada.

355ml can in my hotel room, Seattle on Friday 15th August 2025. A gift from one of the brewers at Phillips. Hazed light golden body, citrus bite with a piney undertone; not too sure it explodes with flavours though. Pleasant enough but a little watery when it mattered.

355ml can, a gift from one of the brewers. Drank in my hotel room on Friday evening, 15th August 2025 (in Seattle). Hazy light dull golden body, white head that faded swiftly. Low hop count, low malt count, watery feel. It is the Lil' Hazy IPA the can claims.

355ml can, as Solaris Summer Wheat Ale. Direct from the brewery, given by one of the brewers. Light haze to the golden body, wisp and collar of white bubbles that soon disappeared to nothing. Peachy nose and taste, turning sweeter as it warms.

4oz pour on a flight before a brewery tour; 14th August 2025. Mini haze to this one, white crust. Citrus front with subtle flavours and little 'oomph' in it's make up. Didn't take to it at all.

4oz pour on a flight at the brewery before a tour on 14th August 2025. Golden body, white head. Typical West Coast IPA with citrus and piney notes in both the aroma and taste. Nothing too exciting or different here.

4oz pour at the brewery before a tour with one of the brewers on 14th August 2025. Clean and clear light golden colour, small white crust on top. Mild bready aroma and taste, some light hop action. Refreshing and clean tasting.

355ml can from one of the brewers at Phillips, drank in his dads garden on 13th August 2025. Used to be their biggest seller, but the new (ish) Lager 'Tilt' has now taken over. This poured a nice amber colour with an off white head. I thought it crossed over a few styles; English Pale Ale, an Alt Bier and an American Amber (All of which I like). Malty front and semi sweet throughout, went very well with the BBQ food I had with it.

US Pint can into a Phillips badged glass at my friends holiday trailer by a lake in Vancouver Island on 13th August 2025. Crystal clear golden body, white head. Crisp and refreshing, Slightly malty and on the sweeter side, minimal hop action. Enjoyed it.

On tap at Devil's Elbow. Pours clear gold with a white head. A bit skunky on the nose. Flavour has soggy grass and skunky malts. If you're going to brew a pilsner like this, don't.
