Not sure I get any of the adjuncts, but instead a very fruity, easygoing mixed culture character. Really nice balance with light hints of caramel mixed in to white bread-like malts.
Wow that's interesting. Instead of any of the listed adjuncts, I get a big curry or bay leaf character. I guess that's the camphor character of the maple, but it's certainly expressed very uniquely. Otherwise, a soft, malty body and probably the deepest texture of any of these aged sours I've tried from AT in this Dead Sparrow Society series.

Smells a lot less spice-dominated than the base beer, thankfully. Nice and malty still, with a citrus character and minimal wood.
Malty and biscuity with honey and still a bit of scratchiness and lots of spice. Citrus, tea, mild hop bitterness and light wood. The foeder has improved this considerably but the weird spice and big honey still overshadows it.

After a long run of adjuncted beers in this series, it's nice to hit an unadjuncted one. And it sure smells worthy. At 6 months the Brett has emerged, gently but assertively. Soft, nutty, tasteful oak behind it with rustic grains and a bit of lemony acidity.
Chewy, lightly bready, rustic grain provides an excellent backdrop to the Brett and light lacto. Oak is gentle but noticeable, adding dryness and complexity. Almost a juicy lemony tartness in the finish with bit of honey-like malt and fruity Brett lingering. Very flavorful and balanced with a good, but not overdone, helping of tart acidity.

Still plenty of roasty porter left in the nose followed by mellow cacao-like notes and minimally spicy chili. Cinnamon is mildly spicy, earthy, tasteful, as well. Lots of chocolate and only a touch of the whiskey (only 3 months in barrels). But it's all homogeneous, mellow and aromatic. Clean and no oxidation as of yet.
Cinnamon up front chased with juicy, fruity, minimally spicy pepper and tons of earthy cacao-like character on the finish. Light roast, light coffee and a medium-light body that seems probably a good deal more attenuated than it was when fresh. Lots of fruitiness and flavorful spice lingering with no heavy acidity or dominance of adjunct. I do wish there was a bit more whiskey/barrel character, but at this abv I know you have to be careful leaving it in the barrel too long. Nice and drinkable, flavorful, good and dry.

Very fruity with round grapefruit, mild pine and papaya all softened by the oat and fruity yeast. Lingering pineapple-lychee with the floral character of those helping balance the sweet notes somewhat.
Pineapple, mineral, earth and rustic grain with rich base malt and rich, chewy oat. Very fruity with pine and grapefruit, as well. A healthy bitterness but it's also very, very malty, so it only just balances. Kind of like a hazy, malty WC. Could use a bit more attenuation, imo, but it's very rich, flavorful and satisfying without being overdone in any aspect. A sipping IPA, if you will.

Some musty cellar notes and lots of yellow fruits. Hint of peppery, slightly citrus acidity. All of it backed by rich, honey-like malt.
Whew, cupcake icing! Wow that's sweet. At five years old it certainly doesn't seem to have continued to ferment. Not enough, anyways. It's a rich maltiness and not any cheap adjunct sugar, but it's very, very rich with aforementioned icing, as well as intense honey and vanilla. Somewhat compelling, though, in the way contemporary imperial stouts and barley wines are (that intense, sweet syrupiness and big fudge richness parallels the intense cake-like maltiness here). There's almost enough acidity to balance but not quite. Clean, rich, malty. Gains a bit of dessert-like Semillon character as it warms and breathes. Interesting stuff!

Smokey and woody, nice mix of both. Almost a bit of iodine and deep black pepper. Old, dried peaches, leathery and tart, all of this distracting from the potential saison character, but with rustic grains emerging. There's an almost honey or maple-like sweetness on the end. Doesn't smell like a saison to me, but it does smell very interesting.
Woody as hell with an ultra-dry, lightly peppery, lightly peaty woodsmoke character and a fair bit of very highly attenuated malt. Fruity peach as an afterthought, just like the yeast/culture, which doesn't really establish itself much here. There's a fun mix of maplewood, smoked maplewood, maple syrup and even some light bourbon, but there just isn't enough malt flavor (and barely enough texture), nor hardly any yeast/mixed culture character. That said, the peaches themselves aren't overdone and this is 2.5 years old, so attenuation is to be expected and it's not over-attenuated, at least (but getting there).

Fruity notes abound with nothing particular jumping at me. Some good Sacch character and a round, piquant, cherry-like character to finish. Quite delicate for its size.
Touch of diacetyl it seems (buttered popcorn), but it's pretty minimal. Chewy barrel and fruit tannin with a good malt/wheat character. Well-attenuated. As is usually the case, the palate fully adjusts to the diacetyl (if that's actually what it is) and I barely taste it even by the second sip. What I do get is beautiful fruit and Saison flavors working in harmony. Low but ample acidity.

After 7 years you better believe this thing smells mellow, homogeneous and not too sweet. No Brett has developed and it's got a lovely, large Sacch character redolent of Blaugies. Musty and rustic but with rich malt undertones.
Rich and malty beyond its years, with a minty, peppery, lightly bitter dandelion character somehow still persistent on the finish. Excellent malt depth and balance, though I've got to imagine 7 years ago this was a pile of sweet syrup. Glad to reap the rewards of having it now instead of then. More rich, honey-like malt lingering with a pinch of unfermented honey, cellar and bitter green.

Rich Brett character is lovely and followed by perky, not too acidic grape. Good mineral/chalk and rustic grain.
Tart, funky, lots of grape but not dominating or too acidic. Cultures are funky and lightly tart without any big acid either. Body has certainly dried out and is on the lighter side, but the oak gives back some structure.
