16oz can drunk at the brewery, 3/6/22. Heavily, heavily primed can leads to massive, frothy, white head that is slow to recede. Clear, bright, lemon-yellow liquid is heavily sparkling. Delightful cellar notes, with strong mineral, hints of medicinal Brett and biscuity malts to back things. Earthy, woody motueka and lemon-like meridian don't distract much from the delicate saison quality here and there's no alcohol or flaw. In the mouth it's almost chewy, with a substantial malt/rye heft and also very well attenuated with crisp, clean bitterness and brett-like tartness on the end. Some citrus, wood, earth and such from the hops is interesting and doesn't overwhelm the more delicate notes. Lovely stuff, as usual.

4 pack of cans to go from the brewery, drunk 1/29 and 1/31/22. Moderately-to-heavily hazy, deep golden-brass with paler straw tints and a small, but stubborn, white head. Nose is just phenomenally lushly fruited with tropical fruits, juicy citrus and spicy potpourri and light pine accents. Big honey-like malts keep it balanced and there's no resin, twang or booze. In the mouth it's equally balanced with a big, soft, supple maltiness featuring plentiful honey-like character. There's definitely a slightly resinous quality to it, but in the best way and only minimally. It keeps balance and the force of the beer is juicy and spicy citrus (orange, lemon, tangerine) with light melon and a most playful pine character. Other than Tree House, I haven't seen Chinook and Simcoe done this well in a LONG time.

375mL bottle drunk 1/29/22. Dark amber-to-dark mahogany with a small, dark beige head showing moderate-to-low retention. Good clarity. Nose is interesting and different. Not just a big kick of bourbon, though there is certainly both spice and light coconut noted. Darker specialty malts don't overpower, yet neither does the base malt give a massive impression. Seems pretty tame for its size. In the mouth it's lighter bodied than expected, perhaps desired even. But the malt structure is fine, showing honey, graham cracker and biscuit, but very high attenuation, with the bourbon barrel aging maybe being a bit too stiff and overly strong in flavor for the body and softer, Belgian aspects of the beer. Trying to keep in mind, in a world of massive, gooey, thick pastry stouts that this isn't intended as one. I do appreciate the more delicate flavors, impressive at this size and the commitment to Belgian ales. The fruity yeast shines through on the finish, nonetheless and the flavors are true. Clean and not boozy, but still a touch dominated by the bourbon.

375mL bottle, 2021 vintage, drunk 1/29/22. Light, hay-to-straw-golden, good clarity with a small, but fairly dense, white head showing moderate retention. Nose is highly aromatic, with nearly juicy acidity suggesting poignant bacterial-derived lactic and acetic notes. Rustic grains in the background with ample honey-like maltiness, hints of Brett-like tropical fruit and hints of floral/vegetal/spicy dandelion that is not overdone. No alcohol or flaw noted. In the mouth it's less acidic than the nose would suggest, with an almost silky/creamy mouthfeel thanks to exquisitely tight carbonation. Supportive, honey and biscuit-like maltiness is well-attenuated and plentiful fruitiness and mild-to-moderate acidity balances the finish. The complexity is among the highest I've seen from Amory's Tomb's beers and there's very little here to complain about.

Draft, brewery, 1/28/22. Slight chill haze in this brassy golden liquid. White head quickly to cover then ring. Lilac and lactic acid with biscuits malts. Pinch of acetic character or maybe it's the peaches. Another flavor bomb for it's size. Juicy peach balanced by soft grains, light souring cultures and a surprisingly crisp, bright, floral and citrus finish. Excellent malt texture, great attenuation. Some salt and mineral-like character lingers pleasantly.

Draught, brewery, 1/28/21. Clear, pale, straw-golden with a neat, white head atop. Mostly mineral and light sulfur with straw, hay, cracker and biscuit ending on lightly citric and floral hop notes. Dry and malty and absolutely chalk full of malt and yeast flavor. Light honey, cracker, biscuit, mineral, pepper and flowers are gently bittered by the light hops. Really incredible amount of malt texture for it's size.

375mL bottle drunk 1/24/22. Mostly clear (got a bit of sediment in there by accident), bronze-brass-golden with a small, but moderately-well-retained, white head. Smells softer/more even than Vol. II. Soft, well-developed lacto with no single note emanating strongly. Could probably not even place Gin barrel, cinnamon or peaches, which is totally fine with me. Definitely some good fruitiness but no acetic and no big phenolic notes either. No alcohol noted, which is an accomplishment at 9.5%. Soft and juicy in the mouth with a great, big, round, malty texture that adds cake, biscuit and honey to the peachy, slightly citric, heavily lactic (though only lightly sour) character. Not a big cinnamon or gin barrel person, especially in a BSA, but it doesn't cause any problems here and I can't even pick it out. Just a malty, tart, fruity, strong ale that is clean and not boozy in the least.

Can watching Pats v Bills got to drink local. Dusty gold pour with frothy white head. Nose is grass and fruit. Tastes of cantaloupe, hay, coriander, green tea. Light bodied. Fruity esters.

750mL undated bottle with about 5 months of age on it, drunk 10/29/21. Clear brass-copper with strong carbonation forming a sparse, white head. I can smell the meaty cherry character from a mile away. Lactic acidity in there as well, seemingly not too strong. A touch of lemon and Brett with some biscuit and rustic grain-like maltiness that adds complexity to the nose. Not boozy, no flaw noted. Tart and full of plentiful cherry pie-like character with good attenuation and a strong malt backbone leading to a slick-to-soft texture. Cidery notes of malic acid dot the palate alongside moderate lactic and low acetic acidity. Love the dryness here and the relatively full maceration/attenuation of the cherries. A bit monotonous over the course of the glass, yielding primarily malic acid and maybe a touch more acetic than I care for. Perhaps too well homogenized for its own good at this point. I appreciate the strong texture but it begins to feel a bit like a chore to drink.

Can (9/18/20) pour from trade with AirForceHops--thanks, Chris! It's a hazy yellow with attractive sparkle, 2-finger width white foamy head with fair retention and no lacing. Aroma is strong fruity esters, clove, earth, yeast. Taste is strong bubblegum, clove, fruit. Mouthfeel is light side of light-to-medium bodied with smooth, thin, frothy texture, soft carbonation and finish as taste. Overall, really nice all around!
