375mL bottled Oct 19, 2022, drunk 3/5/2023. Clear cola, frothy head to cover. Nose is nutty, smokey, chocolatey. Excellent bourbon character with licorice, liqueur and cocoa with floral notes and soft, easygoing whiskey. Soft, malty, sweet, very sweet. Chocolate, malty caramel and vanilla. Rich, but yet soft and light.

375mL bottle at the brewery, 3/4/23. Clear, light bronze-golden. Large, white head, slowly fades to cover/ring. Biscuit, cracker, light honey from the malt mixing with light floral notes from the gin barrel as well as moderate mineral and plaster character from the saison yeast. Unfortunately, there's quite a bit of lime character; more than I'd prefer. Otherwise clean and very nicely done. Same goes for the flavor, where the lime character may be even stronger/more dominant. Excellent malt texture/flavor and saison yeast notes (stone fruit, plaster, heavy mineral) with minimal brett. A good candidate for more aging to see if the lime will burn off.

Brewery draught, 3/4/23. Clear medium amber. Beige head slowly to cover. Toasty coffee, light and fruity. Bready, vanilla, great mix of coffee and Belgian yeast. Soft, malty, well-attenuated with good depth. Malty sweet, excellent coffee, wow this is not roasty. Just fruity and light, hell yeah.

375mL bottled Nov 3, 2021, drunk 1/15/23. Clear, ultra pale-blonde. Massive, snow-white head is well-retained. Well-developed Brett is fruity and funky with lemon, rich grass and mild band aid. Cracker and honey from the malt. Delicate, highly aromatic, clean, no alcohol or punchy/twangy Brett. Soft, succulent honey malt. A bit sweet. Floral Brett and a bit of bile mixed in there. Dang, the nose was sooo nice. Not bad or anything but not what the nosed promised.

Canned 10/27/22, drunk 1/15/23. Clear amber. White head at cover. Fresh, floral hops and rustic grains with light mineral and fruit. Very clean, seemingly dry. Soft, malty, dry with just enough specialty malt to add complexity without taking the emphasis off the pale malts and yeast. Hops are pleasingly bitter up front but relax through middle, the beer ending malty/grainy. Hint of caramel, lemon with good graininess and light honey.

Best by November 2023, drunk 1/15/23. Pale golden. Light haze. Small, white head. Sweaty, stinky, mineral and lovely yeast with acidity and nutty rye. Hints of biscuit without excessive hopping. Clean. Soft, malty, with nutty rye and mild, fruity Brett. Tons of flavor with light hop bitterness. Great texture and attenuation, good cracker and rye graininess at points. Love the low hopping. Lots of flavor. Love this series.

Can best before Aug 2023, drunk 9/22/22. Clear blonde, quite pale. Large, white head slowly recedes to cover. Well-done/developed/expressed Brett in the nose is front and center but delicate. Amory's does this so very well. Light honey-like malts in the background provide substantive support. Soft Sacc notes of pepper and plaster, with low acidity yet good balance from the hops. No alcohol, flaw or weird/unwanted yeast notes. Soft and malty, great balance with lightly spicy hops and plentiful brett adding gentle acidity. Excellent maltiness with just enough depth and great attenuation. Hints of lemon but no great acidity. Gentle, with mineral, plaster, pepper and juicy lime and honey.

750mL bottled Dec 29, 2021, drunk 9/2/22. Clear hay-golden with a large, pillowy, white head showing strong retention. Nose is soft and wheaty/oaty, nice and rustic with a pinch of lactic acidity and even, mild, lemony Brett. Good Sacch character too, with plaster, light stone fruit and tons of black pepper. No alcohol, flaw or any disturbance from hops. Just a study in malt and yeast. Soft and succulent with dainty, honey-like malt and chewy wheat/oat. Good graininess on the end, with lemony acidity and mild brett. Clean, easygoing, very flavorful and full of pepper, plaster, mineral and balance.
