PROGRESSIVELY OLD SCHOOL
We make craft beer with a throwback approach. Through a combination of time-tested brewing/blending methods and modern practices, we create beer that is complex, thought-provoking, and above all delicious.

AN ALE PROJECT
We focus on truly slow beer – mainly Farmhouse Ales and Saisons in our wild brewery and lagers on our clean production side – with a passion for experimenting with other wild and traditional styles from Imperial Stouts to IPAs to Dutch Kuits.

ROOTED IN FAMILY
The name Birds Fly South is a nod to founders Lindsay and Shawn Johnson. For the last 22+ years, they lived the Coast Guard life, migrating across the country. Their family, their flock, was always looking to find their back to the south. Once they landed in Greenville, Shawn’s final station, they knew they had found home.

Sample at the taproom during the "Apologize Less / Skin & Bone Double Release" event on 04/20/2018. Clear orange-gold color with a medium ivory white head that dissipates gradually to a film. Strings of lacing on the glass. The aroma consists of citrus, herbal hops and malt. Medium body with flavors of herbal hops, grapefruit and malt. The finish is mildly bitter with a citrusy hop aftertaste. Pretty good overall.

Sample at the taproom during the "Apologize Less / Skin & Bone Double Release" event on 04/20/2018. Hazy copper-orange color with a medium thick off-white head that diminishes gradually to a film. Partial rings of lace. Aroma of funky citrus, yeast, spice and hops. Medium body with flavors of funky brett, citrusy hops, earthy malt and spice. The finish is funky with a citrus and yeast aftertaste. Pretty good overall.

Sparse strings of lace. Aroma of oak, funky yeast, fruit and malt. Medium body with flavors of brett yeast, citrusy hops, oak and biscuit malt. The finish is oaky and mildly funky with a yeast aftertaste. Pretty good overall.

Stringy lace. Aroma of floral yeast, funky fruit and hops. Light-bodied with flavors of mildly funky brett, floral hops and doughy malt. The finish is lightly funky citrus and hops. Pretty good overall.

Pretty good overall.

Partial rings of lace. Aroma of herbal hops, tropical fruit and malt. Medium body with flavors of resiny hops, stone fruit and bready malt. The finish is mildly bitter with a fruity hop aftertaste. Pretty good overall.

Dark brown pour with some ruby around the edges, and a medium light beige head that recedes steadily to a film. Stringy lace. Aroma of tart fruit, yeast and smoked malt. Light-bodied with flavors of zesty and salty citrus, charred malt and wheat. The finish is tart with a citrusy aftertaste. Above average overall.

Stringy lacing on the glass. The aroma consists of peaches, oak, yeast and malt. Light to medium body with flavors of mildly tart peach, vinous oak, yeast and doughy malt. The finish is oaky with a peach aftertaste. Pretty good overall.

Pour at State of Origin 2018. Lovely peach forward nose with musty brett, wet hay and bright muscat notes. Tart on the palate with a young peach note alongside white wine acidity. Oak, wine and more peach on the palate with some woody and leafy flavors as well. Feels light and bright on the palate. Smooth finish with spritzy carbonation. Very enjoyable.

Draft pour at Craft Brewed. Pours a clearish copper with a full 2 fingers of foam that lingers. Lovely saison forward yeast nose with mineral, lemon and vinous white grape notes. Smooth and balanced with malt and peppery hops. muscat. Very drinkable, and not too overly tart.
