PROGRESSIVELY OLD SCHOOL
We make craft beer with a throwback approach. Through a combination of time-tested brewing/blending methods and modern practices, we create beer that is complex, thought-provoking, and above all delicious.

AN ALE PROJECT
We focus on truly slow beer – mainly Farmhouse Ales and Saisons in our wild brewery and lagers on our clean production side – with a passion for experimenting with other wild and traditional styles from Imperial Stouts to IPAs to Dutch Kuits.

ROOTED IN FAMILY
The name Birds Fly South is a nod to founders Lindsay and Shawn Johnson. For the last 22+ years, they lived the Coast Guard life, migrating across the country. Their family, their flock, was always looking to find their back to the south. Once they landed in Greenville, Shawn’s final station, they knew they had found home.

Draft at BeerTemple in Amsterdam for Carnevale Brettanomyces. Hazy pale yellow almost ice cream cone head. Aroma of white pepper and fresh hay. Taste is peppery dusty straw with light bitterness

Sample at the taproom during the "Apologize Less / Skin & Bone Double Release" event on 04/20/2018. Hazy amber color with a medium off-white head that dissipates steadily to an outer ring. Strings of lace. Aroma of herbal hops, citrus and malt. Medium body with flavors of zesty citrus, hops and grainy malt. The finish is hoppy up front with a malty aftertaste. Decent overall.

Sample at the taproom during the "Apologize Less / Skin & Bone Double Release" event on 04/20/2018. Cloudy yellow-gold color with a medium white head that dissipates steadily to an outer ring. Stringy lacing. Aroma of tart apricot, yeast and malt. Light-bodied with flavors of apricot, mildly funky yeast, lemon and doughy malt. The finish is tart with an apricot aftertaste. Good beer all around.

6 3 7 3 13Draft at Beer Temple,  Carnivale Brettanomyces ‘18.  Fairly hazy golden with a white head.  Aroma of light dough, citrus, light fruits and light malt.  Flavour is above light sweet and bitter.  Above light bodied with soft carbonation.
