PROGRESSIVELY OLD SCHOOL
We make craft beer with a throwback approach. Through a combination of time-tested brewing/blending methods and modern practices, we create beer that is complex, thought-provoking, and above all delicious.

AN ALE PROJECT
We focus on truly slow beer – mainly Farmhouse Ales and Saisons in our wild brewery and lagers on our clean production side – with a passion for experimenting with other wild and traditional styles from Imperial Stouts to IPAs to Dutch Kuits.

ROOTED IN FAMILY
The name Birds Fly South is a nod to founders Lindsay and Shawn Johnson. For the last 22+ years, they lived the Coast Guard life, migrating across the country. Their family, their flock, was always looking to find their back to the south. Once they landed in Greenville, Shawn’s final station, they knew they had found home.

Can at home. Nose is fruity some spice. Tastes of guava but not super fruity, grapefruit, white pepper, grass. Bubblegum. Fruity finish. Some chalky notes linger. Pleasant brew.

Some chocolate. Velvety texture. Pretty decent imperial stout. Dark chocolate and vanilla. A little coconut, some oil. Black pour with good head. Bittersweet finish. Tap at Snally.

4 oz pour from bottle at Red Cypress brewery. Pours clear golden color with white head. Aromas of Brett funk, earth, yeast, and citrus. Similar flavors. Medium body with average carbonation.

This beer is a hazy straw color with a medium bright white head that diminishes gradually to an outer ring. Partial rings of lace. Aroma of oak, yeast, citrus and malt. Light to medium body with flavors of oak, mildly funky yeast, citrus and biscuit malt. The finish is oaky with a funky and tart lemon aftertaste. Pretty good all around.

Bottle at home grabbed from Half Barrel. Light pretty yellow huge frothy white head. Nose is funky and citrus. Tastes of lemon curd, barnyard funk, some spicy rye and white pepper, yeast and white wine. Smooth and dry palate. Refreshing and funky.

Draft at beertemple. Aroma of watery malt, malt and herbal pine. Taste has watery malt, mild herbal pine, lager yeast and some grassy hop. Not bad.

Draft at Craft Brewed. Pours a clear light, straw color with a lingering finger of white foam. Mustard seed, dill, oak, lemon aromas. Lightly tart, honey, coriander notes on the palate. Great carbonation and creamy mouthfeel. Smooth, creamy oak, peppercorn and hay. Stellar example of a saison. I could drink this all day.
