PROGRESSIVELY OLD SCHOOL
We make craft beer with a throwback approach. Through a combination of time-tested brewing/blending methods and modern practices, we create beer that is complex, thought-provoking, and above all delicious.

AN ALE PROJECT
We focus on truly slow beer – mainly Farmhouse Ales and Saisons in our wild brewery and lagers on our clean production side – with a passion for experimenting with other wild and traditional styles from Imperial Stouts to IPAs to Dutch Kuits.

ROOTED IN FAMILY
The name Birds Fly South is a nod to founders Lindsay and Shawn Johnson. For the last 22+ years, they lived the Coast Guard life, migrating across the country. Their family, their flock, was always looking to find their back to the south. Once they landed in Greenville, Shawn’s final station, they knew they had found home.

Barnyard, lemon, malt, and hay aroma. Cloudy pale yellow with small head. Dry lemon, malt, mildly sour Brett, and mildly bitter hay flavor. Good body. Nice easy drinking beer.

Golden color. Fizzy. Funky, grassy aroma. Starts just a little sweet then gets a moderate hop bitter and crisp finish.

Dirty red color. Not as sweet as expected for a witbier. Taste is slightly funky, slightly bitter. Does have more sweetness as it warms up. Underwhelming.

750ml bottle. Minimally milky (quite hazy with later pours), yellow-ish, pale golden colour with average, firm, frothy to macropore, moderately lasting, minimally lacing, white head. Herbal-spicy and slightly funky aroma, notes of brine, mustard seed, dill, white pepper, a touch of gherkin, salty overtones, a touch of pear, old lemon peel, salted lemon, earthy rye undertones. Taste is tart, dry, herbal-spicy, fruity, hints of quince, sour green and yellow apple, sage, white pepper, old lemon peel, subtle wheaty sweetness; oily-watery texture, prickly carbonation. Quite diversified, rich in subtleties - good!

Taster at the Destin Craft Bar. Pours a clear, dark, golden color. The aroma is orange peel, quinine, peach juice, and pine. Sweet and juicy, with a sharp bitterness. Medium body, with a sharp, slick mouthfeel. This is an interesting and malty saison. Not great.

Not much here. Subdued hops offer hints of earth, berry, and stone fruit, while the guava puree barely even factors into the equation, adding kind of a slurry-like appearance but not imparting much tropical juiciness. Mineral bitterness needs more malt and/or fresh hop notes for balance. Grows astringent as it warms. Pass.

Copper color with toasty aroma and flavor. Kind of boozy taste with malt sweetness, toasty, and some hop bitterness. Reminds me of Wee Heavy.

This bottle has the distinction of being my 10,000th rate. 750ml bottle pours a starbright gold with some soapy, white head. Nose is nice, soft with grist, lemon, some baby powder. Flavor is flowers, light grist, lemon, perfume. Finishes slick but dry. Could be better on all fronts. So fitting my 10,000th rate came from a bottle shared at a Ratebeer tasting. Many thanks to those currently in the DC tasting group and all those who have been a part of it over the years. Many thanks to my other, non-Ratebeerian friends who I've rated with over the past 13 years. Many, many thanks to my family and especially my wife who have put up with my rating over the years and have tagged along on so many obscure brewery trips. Thanks to Ratebeer, which has encourage my interests in beer since I joined in 2006. Ratebeer exists because of people and community and my life is more full because of the people and community I've found through Ratebeer.
