PROGRESSIVELY OLD SCHOOL
We make craft beer with a throwback approach. Through a combination of time-tested brewing/blending methods and modern practices, we create beer that is complex, thought-provoking, and above all delicious.

AN ALE PROJECT
We focus on truly slow beer – mainly Farmhouse Ales and Saisons in our wild brewery and lagers on our clean production side – with a passion for experimenting with other wild and traditional styles from Imperial Stouts to IPAs to Dutch Kuits.

ROOTED IN FAMILY
The name Birds Fly South is a nod to founders Lindsay and Shawn Johnson. For the last 22+ years, they lived the Coast Guard life, migrating across the country. Their family, their flock, was always looking to find their back to the south. Once they landed in Greenville, Shawn’s final station, they knew they had found home.

On tap @Beer Temple in Amsterdam. Ruby pour with a minimal lacing. Nose: rose wine a bit vinegar. Mouth is sessionable, watery, red fruits.

At brettfest. Aroma of red grape, cherry, oak and funk. Taste has bitter cherry, tart funk, oak and wheat. Allright.

At brettfest. Aroma of tart herbs, citrus, white grape, oak and horseblanket. Taste sweet herbs, tart, mild horseblanket, citrus, dry orange and wheat. Nice.

Carnivale Brettanomyces 2019. Pours a hazy pinkish red head. Aroma's are sourish, fruity, a bit suplhur. Retronasal it's sourish, fruity, zure matjes. Flavour is moderate sour and fruity. Light bodied, thin on the palate.

Hazy yellow color, lots of foam, musty aroma. Flavor is slightly sour and funky, earthy finish.

Dark yellow with pine aroma. Flavor is bitter hops, underlying sweet citrus fruit, and a heavy dose of alcohol. Fruit cuts the hop bitterness, plus a hint of earthy and funky flavor.

50cl bottle pours a clear gold with basically no head. Nose is lemon, Vitamin C, perfume, white grape. Flavor is tart with lemons and acid, perfume, kumquat, white wine vinegar. Tart finish.

Nice honey notes with a spice rye back, bit carby but overall tasty and light if you don't mind the bubbles. Apparently will only get more tart in the bottle, quite nice now but could benefit from sitting some more to rid a bit more bitter.

Musty lemon, malt, and hay aroma. Cloudy pale yellow with moderate head. Dry musty lemon, malt, and moderately bitter hay flavor. Good body. A straight forward saison that nails it.
