PROGRESSIVELY OLD SCHOOL
We make craft beer with a throwback approach. Through a combination of time-tested brewing/blending methods and modern practices, we create beer that is complex, thought-provoking, and above all delicious.
AN ALE PROJECT
We focus on truly slow beer – mainly Farmhouse Ales and Saisons in our wild brewery and lagers on our clean production side – with a passion for experimenting with other wild and traditional styles from Imperial Stouts to IPAs to Dutch Kuits.
ROOTED IN FAMILY
The name Birds Fly South is a nod to founders Lindsay and Shawn Johnson. For the last 22+ years, they lived the Coast Guard life, migrating across the country. Their family, their flock, was always looking to find their back to the south. Once they landed in Greenville, Shawn’s final station, they knew they had found home.

Pretty damn wonderful saison, pungent and spicy, funky with a mild chardonnay-inspired tartness, finished off by a bracing rye flourish. Grass, clove, and white bread mix with straw and lemon, and a mild bitter streak on the back end plays nicely with the rye. Lovely pint.

On tap at Dominion Wine and Beer, pours a clear gold with some ringing, white head. Green apple and green grape on the nose. Flavor has some lemon and some cheesy funk, still plenty of green grape and green apple. Tart and funky on the finish. Cool. 8 3 8 4 15

(Draught at Beer Temple, Amsterdam, 22 Aug 2018) Pale golden colour with frothy, white head. Sourish, hoppy nose with citrus, lemon peel, spicy rye, flowers and fresh hops. Spicy, hoppy taste with notes of citrus, grapefruit, resin, spicy rye, a touch of mint, fresh hops and a dry finish with a mild acidity and a balanced citric bitterness. More than medium body, quite dry. Fairly complex. Tasty and refreshing. Nice one.

The Aromas are basic straightforward tart with a faint rhubarb and maybe some salt. Flavors are similar to nose again tart dominates enhanced by good carbonation with a bit of salt and and even smaller amount of rhubarb. Drinkable nice tart beer but nothing special. Good finish and body.

750ml bottle at the late December DC RB Tasting. Poured a very slightly hazy, dark yellow color with a small, nice looking off-white head. Aroma was nice funky notes. Light sweetness, with a little bit of wine, wood, and mild tart funky notes. Very pleasant.

16oz can pours a lightly hazy, dark orange with lots of frothy off white head. Sourish nose, herbs, potpourri, dried citrus peel. Flavor is more palatable, but something is still off, orange juice, dried citrus peels, malt, herbs, a little tomato. Finishes lightly tart. Odd.
