Description
Craig studied Malting, Brewing and Distilling science in Edinburgh, worked in several micro breweries in the UK and also for an independent malt whisky bottler. A bona fide flavour junky, he was naturally attracted to La Belle France where he worked for a few years in Burgundian wineries before settling with his French wife and family in the countryside north of Paris where he started his activities in 2010.
To get the business up and running he used the ultra-scientific, quality-driven de Proef brewery in Belgium and still uses, for the moment, this brewery for the production of the first three creations: Agent Provocateur, Cuvée d'Oscar and Psychedelia. in June 2015 a brewery installation was completed in the French farm-house where he lives.

€3 at Moeder Lambic
A - 4 fingers. Off white creamy head. SRM of 12. Brown red dark.
S - Berries fruit. Mango apricot and peach. Raspberry. Mild pine scent and yeast.
T - Nice big wheat taste. Slight berry seeds. Tangy but on the low end. Very slight pine hops at the finish. Pretty spicy and heavy bready yeast which doesn’t match the other flavors.
M - 25% carbonation. Medium body. Weird grassy dry bread sort of finish in my mouth.
O - It’s an okay beer. Not great. 71/100.

Weicher, mild hopfiger Beginn. Ebenfalls milder Mittelteil, die Hopfennaromen haben eine angenehme Fruchtnote. Gering herber Abgang. Nett. 11/10/9/9/10/9

Corked bottle from L’Abbaye des Saveurs, Lille
Hazy dark amber color with red shades and generous head. Nice aroma of fruity hops, some passion fruit, and spices. It has a good body strength, wheat and caramel flavor, some passion fruit, and maybe too much yeast; there is moderate residual sweetness, which is a nice addition.
Pretty good.

33cl bottle shared Dutchdrebus. Hazy cloudy yellow to light orange color, small to medium white head that fairly quickly becomes a decent white lacing. Smell malts, hops, lightly yeasty. Taste malts, hops, bitter, but pretty watery. Doesn’t taste like 6,5%ABV. Medium carbo, low to medium body. Expected this to better.

Draft / sampled @ Chez Moeder Lambic Fontainas: dark fruits/dark brown coloured with a creamy white head, smell is dark berries, red fruits, very fruity hops, taste is bitter floral hops mixed with both fermenting & touch fresh berries, leading into a serious fermenting strawberries aftertaste, peach, sweet upfront, fermenting fruits/sour in the finish, interesting & nice, fruit smootie & dry body, not sure about the wheat ale dryhopped with nelson description but either way this is quite interesting & good as well
