Description
Last beer was released in July 2021 and common consensus is that this is the year the brewery should be set as closed.

Do note that due to the nature of the beers produced both BrewDog and other online retailers continued to sell the beers for many years after the closure.

Dedicated to exploring and pushing the boundaries of what is possible with fermentation, we are on a quest to redefine Wild and Sour beers, forever. With a purpose-built facility where craft and nature find harmony, we utilise wild yeasts and microbes from our environment and ingredients sourced from all around the world.

Appearance: Cloudy yellow with a one finger tall white frothy head of low retention. Aroma and taste: Tropical fruits, citrus, slightly lactic. Near to dry. Light to medium sour, light bitter. Mouth feel: Light to medium body, soft to average carbonation. Overall: No bad.

Small, if stable, just off-white head over still, clear reddish golden beer. Immediate delicate, but unmistakably fruity nose, with straw- and raspberry, and a whiff of... whisky? Quite sour, sour grapes, sour sherry. There remains a subsurface fruitsweetness. Again strawberry, raspberry and other red (berry)fruit. Finish has a distinct flavour of old winebarrels, maybe like very aged Rosé d'Anjou. Bit aggressive acidity, if nowhere as bad as USA kettle sours, and moreover mellowing in time. Light body, low carbonation, faint fruitslickness, long-lasting fruitflavours. Really nice, if not spectacular.

Bottle. Red/dark brown with no head. Aroma of cherries, vinegar, nuts and wood. Taste of cherries, hazelnuts, wood, red wine and chocolate cake. Tart and sour. Low bitterness. Medium carbonation. Not that much of a whisky presence but overall it’s nicely balanced and pretty interesting. This is fine.

Bottle from Simon Cheeseboard. Cheers! Aroma is vinous, with marmalade spice and sweetness. Alongside there are resinous hops. Opaque amber. Frothy foamy white head develops a large bald spot. Jammy. Marmalade. Spice. Vinous edge. Resinous hoppy core. Medium bodied. Oily. Flat-average carbonation. Long dry astringent finish. Enjoyable - could be a winter warmer of a Sour IPA.

Aroma: chocolate, figs, medicinal notes, cinnamon, Taste: Tart, medicinal notes, TCP, Interesting, quite sour, still barrel driven. Rated as laphy fanboy.

Bottle at BBT 11/2023 #2. This is a masochist beer. The peat character, I can understand. I like peat in some contexts and in certain intensities. But here it is combined with a pretty heavy sourness, which is very much out there, without any meaningful further characteristics. This is taking a thing without any understanding a shoving it like a retard might shove a rectangular wooden block into a triangular opening. No finesse here, just bullshit.

BBT november/ 2023. Very dark brown color with beige head. Aroma of chocolate, alcohol, coffee, peat. Taste is very sour, pickled cabbage, light chocolate, alcohol.

Bottle at BBT 12/2023 #2. Malty aroma and taste, strong medicinal notes, chocolate, peat, medium to high sour. Medium to full body, peaty medicinal sour finish. Very unballanced.
