Description
Last beer was released in July 2021 and common consensus is that this is the year the brewery should be set as closed.

Do note that due to the nature of the beers produced both BrewDog and other online retailers continued to sell the beers for many years after the closure.

Dedicated to exploring and pushing the boundaries of what is possible with fermentation, we are on a quest to redefine Wild and Sour beers, forever. With a purpose-built facility where craft and nature find harmony, we utilise wild yeasts and microbes from our environment and ingredients sourced from all around the world.

Bottle at home. Pours deep burgundy with a quickly disappearing head. Nose is lightly acetic sourness, fruity tartness, light nuts and sweet booze in a nice harmony. Taste is tart fruity upfront, cherries appear first, then come a sharp, lightly acetic sourness, some faint nuts again and in the finish a warming boozy touch also appears to round out sourness a bit. Closes with a long lasting sour finish, this time it’s the cherries again, has medium body and soft carbonation. The aroma is truly lovely here, but in the taste I would’ve liked more of that boozy whisky touch cause without it it was borderline too sour for me. A tasty and fun brew nevertheless.

Bottle shared at work. Pours opaque golden with thin white head. Nose acetic acid, wood, peach jam, and some funk. Taste is sweet fruits upfront, but immediately there's some acetic sournes to balance it out. Then the chili appears and takes over right away. In fact, it becomes borderline overwhelming but manages to remain just fine. All in all an interesting, tasty sour.

Slightly cloudy orange/copper pour with a stable white head. Aroma is malt, grapefruit, yeast, some vinegar. Taste is somewhat sour (no surprise there), grapefruit, malt - decent bitter finish.

On tap @ BPBW. This is a sour stout. And it works. What's more, it's hecking genius: sour and fruity in aroma, while keeps the roasted, "dark" character in taste. This is truly genius.

Lattina. All'olfatto si esprimono sentori di sour. L'olfatto viene stimolato in maniera elevata e l'esistenza olfattiva è apprezzabile. Il cappello di schiuma resiste poco. La grandezza delle bollicine è a grana fine. Il colore è come l'inchiostro nero. Il corpo è pieno. L'amaro è nella media e c'è anche una componente sour pungente. La forza gustativa è elevata e la permanenza è sufficiente. Il retrogusto è di decente intensità. Al gusto vengono donati toni di cioccolato, nocciole tostate, frutta secca, acetico, cherry, vino rosso, bubblegum, salsa di soia e vaniglia.
