Description
Last beer was released in July 2021 and common consensus is that this is the year the brewery should be set as closed.

Do note that due to the nature of the beers produced both BrewDog and other online retailers continued to sell the beers for many years after the closure.

Dedicated to exploring and pushing the boundaries of what is possible with fermentation, we are on a quest to redefine Wild and Sour beers, forever. With a purpose-built facility where craft and nature find harmony, we utilise wild yeasts and microbes from our environment and ingredients sourced from all around the world.

Draught@Omnipollos Hatt, Stockholm. Hazy peachy orange juice yellow colour, small white head. aRoma is floral, peachy, some wooden and mild berry notes. Flavour is big time peachy and wooden tartness with some bitter tones as well.

50cl bottle - Pours an unclear reddish brown colour with a tiny frothy beige head that quickly disappeared. Aroma is vinous, and vinegary, tart raspberries and grapes. A tart vinous fruity sour taste, tart raspberries, light vinegary flavours with woody notes and a fruity sour finish.

Gold with a frothy, white head of modest duration. Aroma of strawberry, grapefruit, apple, and a mild funk. Taste is tart to moderate sour with both a yeasty sweet and a touch of bitterness underneath. Well balanced and with just enough nuance to keep things interesting. Medium-bodied, moderate carbonation. Modestly refreshing. Good.

Almost clear, amber color and a white head. Fruity nose, strawberries and rhubard, tart, faint acidic. Sour, acidic-vinegaer, decent fruity, faint bitterness.

Frothy white fair fully diminishing head. Black colour. Heavy malty and acetic aroma. Moldy very acetic flavor. Long really acetic fnish. Oily palate. One.dimensional.

Bottle. Black body under a small tan head. Nice aroma of dark malt, dry fruit, dark berries, ripe cherry, wood, acid, alcohol and a hint of acetone. Taste has a fine balance between sweet malt, dry fruit and acidity, lots of dry fruit, quite acidic, complex with chocolate, raisins, cherry, wood, mild whisky, some acetone and balanced bitterness. Well balanced body and long lasting aftertaste. Very nice indeed.

Bottle 0.5l. Slightly cloudy, gold colored. AROMA- sour apricot compote, sea buckthorn, funky, cheesy, floral and spicy hops, tropical fruit, citrusy. FLAVOR- moderately sour, slightly sweet, lightly bitter, the same as aroma, pink grapefruit, pineapple. Medium to fuller bodied. Really good.

Bottle from the brewery online shop, at 7.0%. Pours like scrumpy, cloudy golden with no head, but quite high carbonation. Aromas of sour lemon, faint oak, sour mash. Taste is sharp sour, woody, tinned fruit. Sour finish.

On tap at Brewdog Birmingham, pours a deep dark cherry brown with a small off-white head. Aroma is full of intense brett funk, intense wood, and subdued tart cherries. Flavour is not landing right — there's lots of Worcestershire sauce, followed sour cherries, wood, and funk. The balance and integration aren't great. Sour, acetic and harsh. Not so good.
