Description
Trillium Brewing Company was founded by JC and Esther Tetreault, a young dumb couple in love, planning their wedding and dreaming about how they would spend their lives together. The desire to build a brewery was about more than just making beer, it was about creating a way of life and building a community with which to share experiences. A beer geek and botany nerd, JC chose the trillium flower to represent what we strive to bring to our beer and our lives: beauty, strength, simplicity, and balance. We operate a brewery and taproom in Canton, MA as well as a full service restaurant and brewery in the Fort Point neighborhood of Boston. We also operate seasonal pop-up beer gardens around the city of Boston under the Trillium Garden project.

Tap at Whole Foods. Booming hop tone. Call this IPL or something but Lager is a stretch. Awesome tone, balance. Kind of nails it whatever it is. Cool, crisp, well made.

Bottled at Goblet, enormous thanks Splivalo for sharing! Very dark, blackish brown body. Huge, oily malty aroma, coconutty barrel notes, some caramel and cocoa. Lean, smooth taste, more barrely coconut, bit ashy, dark chocolate, light grapes, dryish, but warming, enormously warming even. This is excellent - not the best I've had, but an impressive, big beer!

Draught @ Aarhus Together, 2025. Pours hazy golden orange with a white head. Tropical and kind of greasy and filthy. Dank and earth. Grassy. The D hopping is not my thing and in this one it's evident.

On my palate, I got way more floral and bitterness and almost no citrus/stone fruits. I generally love Fort Point pale ales (even though they are high in ABV for a pale), but this one is not my favorite.

Juicy, rich, no lacto, no big sugar. Smells like a return to form somewhat. Not sugary, but maybe be a little less fruit intensity than the best in the series.
Juicy, fruity, soft, succulent, very smoothie-like. Low acidity but great balance and softness. Wow, this is way better than like the last five versions I've had. They seem to have found the balance again, with big flavors without the excess sugar.

Juicy spicy floral. Cracker and biscuit with a touch of honey. Lots of chalky dry hop.
Earthy, chalky, mineral rich with a succulent, butter-tinged biscuit and honey. Good bitterness and a nice chewy body. I suppose it's slightly on the sweeter side but only a shade. Lingering lime zest and juicy stone fruit.

Spicy lemongrass. No allium as usual from Trillium. They do do Mosaic well, say what you will about Trillium these days. Some sweat and dried tropical fruit. No toast or caramel. No pine. Typical white bread malt.
Spicy, juicy, touch of buttered white bread and lingering honey. Low bitterness. Very hybrid-like. Has that sweaty boiled hop character or a WC IPA but that's about the extent of the resemblance. Fine with me.
