Description
Trillium Brewing Company was founded by JC and Esther Tetreault, a young dumb couple in love, planning their wedding and dreaming about how they would spend their lives together. The desire to build a brewery was about more than just making beer, it was about creating a way of life and building a community with which to share experiences. A beer geek and botany nerd, JC chose the trillium flower to represent what we strive to bring to our beer and our lives: beauty, strength, simplicity, and balance. We operate a brewery and taproom in Canton, MA as well as a full service restaurant and brewery in the Fort Point neighborhood of Boston. We also operate seasonal pop-up beer gardens around the city of Boston under the Trillium Garden project.

Panda thanks to Wingman. Hazy orange gold beer, small bubbly pale cream colour head. Airy palate, a touch thin and a touch dry. Decent fine minerally carbonation. Light bodied pale malts, a light creamy sweetness. Hops bring light cooling pine into a candyish lemon and lime vibe. Hop spice starts to bite. Light finish. The basis of a good IPA here but, the delivery feels a bit limp wristed.

Teku showing lightly foggy pale straw with half a finger of clean white foam.
The nose is pineapple forward with very light notes of pineapple and papaya.
The palate is well carbonated and light bodied. Pineapple forward but dry yet juicy with light notes of papaya and guava underneath followed by more dry but juicy pineapple and papaya on the finish. Fantastic.

Panda at home, thanks to the Wingmane, 28/05/2026.
Murky orange to amber topped with an off white cap that thins to a swirl.
Nose is bitter tropicana, grass, raw pineapple, grapefruit, melon.
Taste comprises dank chimes, grass, bitter orange, grapefruit.
Medium bodied, fine carbonation, semi drying close spiked with grassy come danko hop bitterness.
Okay DIPA ... seems a little tired.

Pours hazy burnt orange into a tulip. Off-white head with little retention recedes to pool surface. Earthy funk and mild dusty grape skin aromas. Sharp with sweet concord grape upfront turning quickly to crushed aspirin and lactos before the medium length bitter funk finish. I could do without that finish.

Panda thanks to Wingman. A modest haze on this orange gold beer, small bubbly pale cream colour head. Light palate, not quite semi dry. Good fine minerally carbonation. Slightly thin bodied pale malts, a light but pleasing creamy sweetness. Peacharine hops open with light but bright pine and a hop spice nibble. Peach led stone fruits ensue, a very mild ripeness. Fairly light and crisp finish. It's really only the aftertaste that I can taste the expected candyish peach. Along with persistent hop spice. Interesting. A slightly different showing for this stellar new hop.

Side pour draught, Fenway, 5/23/26.
Earthy, cellar must for days. Musty basement bar of an ancient building in Czechia vibes. Love, love, love the lower hopping rate on this. Let's see that fuckin' yeast!
Buttery honey and damp basement with lemony hop and a good, chewiness to it. Not quite as ultra-crisp as some, but still dry and very interesting. If that is diacetyl in here, I almost think it's beneficial, adding complexity and being pretty on-theme with this yeast bomb. Heck yeah.

Canned 02/19/26.

Fenway draught 5/23/26.
Classic thickly-hazy WC IPA....
Smells like a NE style, with fruity yeast and round, pillowy base malt. Only the significant hop acid gives any indication of intended style, though I've smelled more WC-leaning IPAs that Trillium has classified as an NE style. Whatever the case, it's bright and challenging with pine-laced tropical fruits and woody, lush, green Simcoe.
Good and bitter up front with soft-ish malts helping balance but then quickly succumbing to a rush of bark, resin and chalky pith. Ends on this drying note, somewhat abruptly, though with a bit of juicy berry and white grapefruit lingering.
Good use of NE texture and malt with WC hopping/bitterness.
