Trillium Brewing Company was founded by JC and Esther Tetreault, a young dumb couple in love, planning their wedding and dreaming about how they would spend their lives together. The desire to build a brewery was about more than just making beer, it was about creating a way of life and building a community with which to share experiences. A beer geek and botany nerd, JC chose the trillium flower to represent what we strive to bring to our beer and our lives: beauty, strength, simplicity, and balance. We operate a brewery and taproom in Canton, MA as well as a full service restaurant and brewery in the Fort Point neighborhood of Boston. We also operate seasonal pop-up beer gardens around the city of Boston under the Trillium Garden project.

Cider or beer? Tastes like cider. Apple crumble for sure. Pours hazy golden with OK head. Finishes pretty sweet. Snally.

0.44l can. Hazy yellow body with a white head. Lots of pineapple both in the aroma and the taste with notes of honeydew mellon, oats, honey, mango and lemon zest. Mostly sweet and fruity, but the finish has a hint of bitterness to it. Nice NEIPA (the label says pale ale, but for me it's a NEIPA).

Brewers Tap draught, 10/18/25.
As pictured.
Strong espresso, crunchy, beany, fairly dark, though a bit of vanilla and fruitiness in there. Light milk chocolate from the malt. Not acrid or acidic.
Soft, silky, chewy, though a bit slicker and looser than I recall from past versions. On the sweeter side, though not problematically so. My main issue is that the roast is rather dark. Just typical, boring, heavily roasted coffee notes.

Half pour on tap at Henry St. Taproom, Saratoga Springs. Cloudy, dark yellow, thin head with fair retention and no lacing. Aroma is strong citrus, hint of vegetal/grape and background malt. Taste follows aroma. Smooth, frothy texture, medium bodied, lively carbonation and dry, malty finish. While not expecting same hops from an APA vs. IPA, lack of Nelson is disappointing. Ok.

Pour at Snallygaster 2025. Poured dark, cider - like fresh cider not alcoholic cider - so a deeper, darker haze color, with a small head. Aroma was huge apple, and huge apple pie spices. Cinnamon, nutmeg. Flavor was really nice apple, cinnamon, nutmeg, fresh apple. Really, really nice. I thought this was a cider but it's apparently a berliner, and that's just mind blowing to me. One of my highlights at Snally this year.

Canned 9/15/25, drunk 10/10/25.
Heavily hazy, bronze-maize-golden. Medium-sized, off-white head, sits at one finger.
Oh, a collab beer?! So that means it's going to be good!? Yep. Trillium really mailing it in these days except on their collabs. And here with Monkish, no less! Indeed it smells excellent; Spicy, deep and full of tropical fruit and white wine. Funk, mineral, zesty citrus and rich, but not too sweet, honey and white bread-like malts. Almost smells more Monkish than Trillium, dare I say.
Earthy and full of mineral and white wine. No herb here, just beautiful spice and tropical fruit with zesty citrus, a healthy bitterness and no chalk/twang/booze. Biscuity, lightly bready malts are fairly supple, definitely well-attenuated. Lingering pineapple, mango, unripe papaya and a hint of pine. Really wonderful balance. Maybe a touch short on the finish, leaving a bit of dull bitterness and particulate lingering.

Panda thanks to Cloin. Opaque dark brown beer, decent bubbly tan head. Smooth and slightly viscous palate, decent fine carbonation. Soft smooth dark malts, a good dark malt creamy sweetness. Mellow and slightly tangy chocolate and chocolate brownie. Mild oaty sweetness. Soft coffee. Not that complex but, rich enough.
