Trillium Brewing Company was founded by JC and Esther Tetreault, a young dumb couple in love, planning their wedding and dreaming about how they would spend their lives together. The desire to build a brewery was about more than just making beer, it was about creating a way of life and building a community with which to share experiences. A beer geek and botany nerd, JC chose the trillium flower to represent what we strive to bring to our beer and our lives: beauty, strength, simplicity, and balance. We operate a brewery and taproom in Canton, MA as well as a full service restaurant and brewery in the Fort Point neighborhood of Boston. We also operate seasonal pop-up beer gardens around the city of Boston under the Trillium Garden project.

Pours a hazy, orange-pineapple, with mid-sized head. Aroma is tropical fruit and citrus, with some astringency. Flavors follow, with the astringent note. Soft mouthfeel. Mild hop bitterness to the finish.

Moderately hazy, paler golden. Firm, frothy, large, white head.
Juicy and with plentiful house yeast adding light cellar/mineral notes alongside white grape and mineral from the hop. Clean and bright with no resin or sugar.
Malty and rich up front but a more elegant honey-like maltiness than a lot of recent Trillium IPAs which seem to have a rather sugary white bread and table sugar character. Juicy, spicy, excellent mineral, ample bitterness.

Draft at Maloney's, 4/22/25. Hazy yellowish, white head. Streaky lace. Peach/stone fruit. Plenty of grapefruit, pineapple. Juicy. Slightly tart. Lots of flavor. Really balanced and drinkable. Medium body, soft carbonation. Quite good.

Undated 330mL bottle drunk 4/20/25.
No head whatsoever despite an aggressive pour.
Rich vanilla, old fruity coffee and lactose-laced chocolate. Don't get any barrel, but there's Barrel-Aged mellowness to it.
Bit of bright bourbon spice with a chocolatey coffee and creamy vanilla-meets-lactose character. It's been so long since I've had an Affogato that I don't remember how I justified the lactose, which is strong here, when is expect it shouldn't be due to barrel aging. But there's a good richness of flavor, some interesting bourbon and good vanilla character. No booze, though quite a bit of coffee yet. I'd say it needs more age, but these Trillium / JWB beers did NOT age well.

Bottle. Lightly hazy copper colored, small white head. Lightly funky, herbal, berryish, some vinegar, leather. Full body, nice carbonation, dry and lightly acidic. Berries, herbal, perfumed, rosehip, some funk, caramel, barnyard. Lemon towards the finish. A bit weird but still nice. 250420
