Description
Stillwell Brewing is the brewery off-shoot of Halifax craft beer bar Stillwell. We are a small brewing project focussing on oak-fermented, bottle conditioned farmhouse-style ales that are subtle, balanced and unique to our brewery. We’re brewing on a very old, very manual 15bbl, two-vessel steam-powered brewhouse. We also make draught-only lagers for Stillwell, Stillwell Beergarden & The Stillwell Freehouse.

500ml bottle at Josh's. Pours a hazy blonde with a white head. Aroma is fruity with barrel and diapers (shitty, literally) notes. Taste is similar. It's ok.

375mL bottle, pours a cloudy yellow with a small white head. Aroma brings out a nice funky farmhouse character, with tart citrus, and some oak. Flavour is along the same lines, with barnyard funk, muted champagne notes, and light oak. Highly carbonated, with a funky, oaky finish. I prefer Batch 1.

375mL bottle, pours a cloudy yellowish blonde with a small white head. Aroma brings out a nice funky farmhouse character, with tart citrus, and oak. Flavour is lightly tart, with oak, farmhouse yeast, and gentle funk. Only gently tart, with a funky finish. Solid.

Cloudy, pale, and a thin head. A nice little brett C note, fair bit of yeastiness. Tart pears, apricots and that sort of thing lend fruitiness. Soft pale malts, mellow brett C, has a nice brettanomyces character. This is pretty solid - still decent residual sweetness that makes this a bit different than others of this type. Maybe in a month it will be more balanced, because it was pretty active when it was opened.

Bottle - Lots of nice tropical notes and funk. Cloudy gold with a small white head. Light soured notes and some stone fruit. Funky, creamy and fruity. Solid.

375mL bottle, exploded upon opening, pours a cloudy dull orange with a medium white head. Aroma brings out lots of brett yeast, some barnyard funk, and oak. Flavour is along the same lines, with plenty of pithy stone fruits, and brett yeast. A bit muddy and muddled, but it's okay.

500ml bottle at Erik's. Pours a hazy blonde with a white head. Aroma is quite pleasant with funky, light, and lemony notes. Taste is very mild and smooth along the same line. Almost flat, but very drinkable.

500mL bottle, pours a cloudy golden with a small white head. Aroma brings out lots of barrel, some wood, wild yeast, and some dry hopping. Flavour is along the same lines, with light wood, wild yeast, and a bit of earthy notes. Woody and wild, but particularly deep. Decent.

Hazy, blonde. Thin head. There's a light brett note, a bit of dusty yeast, with a light fruity, berryish note. Has a nice, mellow barrel character, lots of brett, fairly dry, and this has a lot of complexity. Nice off-dry character.
