Description
Stillwell Brewing is the brewery off-shoot of Halifax craft beer bar Stillwell. We are a small brewing project focussing on oak-fermented, bottle conditioned farmhouse-style ales that are subtle, balanced and unique to our brewery. We’re brewing on a very old, very manual 15bbl, two-vessel steam-powered brewhouse. We also make draught-only lagers for Stillwell, Stillwell Beergarden & The Stillwell Freehouse.

Cloudy dirty gold with a decent white head. Cooked peaches and light baking spice. Nice light peach and a clean finish. Nice.

Bottle. Doesn't look great - sort of dull, and low carbonation. On the nose it comes across fairly bretty, but on the palate it's fairly sweet, soft. Maybe a bit of brett, and the peach character comes through but in a mild mannered way.

500mL bottle, pours a hazy golden with a small white head. Aroma brings out gently tart, fresh peaches upfront, with some saison yeast. Flavour is very juicy, with lots of tart, juicy peaches, a little farmhouse character. Not getting the wine barrels at all. Really nice juicy peach character, with just enough subtle tartness. Not overly complex, but very enjoyable.

A hazed golden saison with a thick frothy lacing white head. In aroma, sweet fruity malt with light perfumy notes, nice and smooth, nice banana bread, light fruity esters, pleasant. On tap at Roots in Place.

Bottle pour at Weathered, pours a dark amber with a small beige head. Nose brings out lovely sherry-like oxidation, toasted caramel, and dark fruits. Flavour is boozier, with lots of sherry-like oxidation, and bready malt. Nicely balanced, with the barrels really showcasing well. Good stuff.

Taster on Weathered. Appearance: murky blonde with a white head. Aroma: malty and funky. Taste: along the same lines, but with nice barrel character. Overall: pretty good one.

Taster on Weathered. Appearance: hay copper, beige head. Aroma: sherry, cherries, nice. Taste: more on the sour side with cherry and barrel notes, a bit thin for the ABV. Overall: it is good, but it is nore sour, than Old Ale.

Tap at Muted Horn. Clear reddish-amber color with whiteish head. Aroma is grapes, full on grapes, so fruity, mild funk and wood. Taste is woody, grapes, good balance of funk and juiciness, dry finish. Mineraly mouthfeel with sparkly carbonation. I love it!
