Description
Stillwell Brewing is the brewery off-shoot of Halifax craft beer bar Stillwell. We are a small brewing project focussing on oak-fermented, bottle conditioned farmhouse-style ales that are subtle, balanced and unique to our brewery. We’re brewing on a very old, very manual 15bbl, two-vessel steam-powered brewhouse. We also make draught-only lagers for Stillwell, Stillwell Beergarden & The Stillwell Freehouse.

Bottle thanks to Andy, shared at Kenny’s 20K tasting. It pours hazy light gold with a thick white head. The nose is bready malt, earthy, musty, smoked cheese, funk, dirt and lemon rinse. The taste is crisp, bitter, refreshingly tart, white grape skin, earth, cracker, gooseberry, barnyard, elderflower, soda water and white bread with a dry finish. Light - medium body and moderate carbonation. Crisp and refreshing. Rather nice work.

Bottle at Madmitch 20k tasting. Pale yellow lasting thick head. Lemon sour soap. Modern type lemony sour. Not my thing. It’s like so many of these modern saisons. Soapy lemon one dimensional. Boring.
