Description
Stillwell Brewing is the brewery off-shoot of Halifax craft beer bar Stillwell. We are a small brewing project focussing on oak-fermented, bottle conditioned farmhouse-style ales that are subtle, balanced and unique to our brewery. We’re brewing on a very old, very manual 15bbl, two-vessel steam-powered brewhouse. We also make draught-only lagers for Stillwell, Stillwell Beergarden & The Stillwell Freehouse.

Pnkish with a slight haze. This has a really nice vinous aroma, with a bit of brett and a fair amount of wood. Light body, but refreshing tartness. Some yeastiness.Really nice balance - delicious, refined beer.

375mL bottle, pours a murky dark orange with a small beige head. Aroma brings out musty grape skins, moderate barnyard funk, and oak. Flavour is along the same lines, with musty grape skins, light barnyard funk, a touch of glue, and some oak. Finishes vinous and musty. Good stuff.

500mL bottle, pours a cloudy golden with a small white head. Aroma is loaded with lots of barnyard funk, some oak, and a touch of citrus. Flavour is along the same lines, with barnyard funk, some light oak, and wild yeast. Funky, brett-y and somewhat bitter on the finish. Very good.

Hazy yellow. Thin head. On the nose, there’s a nice brett C character. It’s drier than the first batch, with less pedio, and it finishes nicely in terms of yeasty, dry, and a hint of brett. Solid.

Hazy, yellow-tan. Definite brett and pedio on the nose, with a clean pale malt. The pale malt base is decent, the brett C stands out. It has a light body, a nice character. Light and drinkable.

Tasting at Oakes' Manor, bottle
Cloudy pale blond colour with almost no head. The aroma is mildly funky and citrusy. Very high carbonation, dry, with some funk, and some vegetables. I would dare saying that the fermentation went sideways, and there was even some unwanted refermentation in the bottle.
Not very good.

Tasting at Oakes' Manor, bottle
Cloudy pale blond colour with almost no head. Strong aroma, mixed bag, there is some funk, but also very strong doughy/cheesy smell; some manure, diapers; controversial. Lean mouthfeel, soft, not too dry, with mild funk, light astringency, and very light lemon trace.

500ml bottle at Josh's. Pours a cloudy blonde with a white head. Aroma is rustic with fruity and barrel notes. Taste is similar. Pretty good.
