Many of you have asked, and surely the rest of you have wondered, “Who is Martha”?

It all began with Katherine, the great aunt of Bill Fokas, when she immigrated from Greece to Nashua 84 years ago. In 1936, she founded the original Martha's Sweet Shoppe. She named it after the popular candy of that era known as “Martha Washington Candy”. The original store was only one tenth the size of the existing Martha’s.

In 1944, Bill’s father, James Fokas known to most as Mitch, came home from WWII and began running his Aunt’s candy shop. He soon expanded it to include a luncheonette with 28 stools; it quickly became the most popular lunch spot on Main Street. “Martha’s Sweet Shoppe and Luncheonette” was a landmark in Nashua for 50 years. Every political candidate that came to Nashua had to stop at Martha’s and they still do today. Many longtime residents and politicians planned Nashua’s future here at Martha’s. Mitch’s next expansion came with the addition of an extremely successful catering company which catered nearly every major function in the city for decades.

Mitch Fokas married Ethel Scontsas in 1959. They had three children who all grew up working for the family business. It was Bill who decided to take over in 1985 after he had graduated from college. He began working with a restoration team on a two year renovation of the Merchants Exchange building which consists of an entire block of Main Street. It was at this time that the luncheonette and candy shop transformed into “Martha’s Exchange”. In December 1988 he reopened; the first floor being a restaurant and bar, which was five times larger than the original diner. On the second floor he designed a large function hall that allowed them to cater on site, they even kept the Sweet Shoppe which helped to keep the nostalgia alive.

Five years later in 1993, Bill had the insight to capitalize on the excitement surrounding the hand crafted beer industry. That’s when he added Nashua’s first and only micro-brewery, doubling the size of the bar and adding 90 more seats. He also included a bar which was originally used in one of Al Capone’s speakeasies in Chicago.

Martha’s has grown and changed throughout the years and will continue to do so in the future in an effort to keep downtown Nashua alive and vibrant. It is our goal for all those who visit to enjoy a home-brewed beer, steak, burger, or simply a piece of candy, and leave with great memories.

Cask @ GBBF 2007. Pours a black color with a small off-white head. Roasted malty chocolate aroma with hints of vanilla and coffee. Sweet malty coffee flavor with asome vanilla hints. Sweet malty finish with lots of chocolate in the aftertaste.

Cask gravity @ GBBF 2007, London. Hazy medium orange color with a small to average, frothy, fair lacing, mostly diminishing, off-white head. Aroma is moderate to heavy hoppy, flowers, grapefruit, citrus, moderate malty, roasted. Flavor is moderate sweet and heavy bitter with a long duration. Body is medium to full, texture is oily, carbonation is flat.

Cask gravity @ GBBF 2007, London. Dark black color with a small, fizzy / creamy, fair lacing, mostly lasting, light brown head. Aroma is moderate malty, strong coffee, roasted, moderate vanilla. Flavor is moderate sweet and moderate bitter with a long duration. Body is medium to full, texture is creamy, carbonation is flat.

Cask-GBBF. Hazy yellow with no head. I didn’t pick up the English character, but rather lime and peach aroma. Dry and bitter with a hint of citrus.

Cask@GBBF2007. Golden colour, not much head. ARoma is eggs, hops, fruits and some yeast. Flavour is hops, grass, slight alcohol and some hints of caramel.

Cask@GBBF2007. Dark rubyish black colour with not too much head. Aroma is a lot of vanilla along with some slight roasted malty notes. Also some licorace. Flavour is very much the same. Wellbalanced.

Cask-GBBF. Black with a small off-white head. Roast aroma with some licorice. Sweet and burned flavour. Didn’t impress me much.

Cask gravity at GBBF 2007. Hazy copper, thinnish beige head. Nice grapefruit hop aroma. Grainy malt in mouth, some toffee. Bit empty in mouth maybe. Still good.

Cask half pint at NERAX on 5/4/06. Deeply brown, near-black pour shows low to medium-low clarity, with very faint dark-chestnut tinges on the sides. Rich tan head is moderately well retained with blotchy lacing and plenty of head clinging to the sides. First couple of notes from the nose are softly smoky. Probably about 70% of the aroma, but yet, not overly oily/greasy and with soft, sweet chocolate flavors behind it. A bit of poignant roast emerges as it warms, and building up momentum are the hops. Green, citric and very juicy, they seem to complement the dark, sweet and rich flavors well, not being too bitter or sharp/disruptive. The smoke seems to fall off significantly as it breathes, or perhaps the nose accustoms itself to it? Anyways, it becomes a lightly cakey, choco-caramel display, with some minimally dry roast on the end. Upon the first sip, two things happen, primarily. Smoke is fluidly distributed about the palate, hand-in-hand with dry roast, and citric, heavily bitter hops spike up on the finish. Lightly oily texture, nearly creamy at times, but importantly, not heavy or underattenuated. Moderate carbonation also sees to this. Vanilla cream, dry wood smoke and strong roast play about heavily, with an appropriate balance of caramel. Plenty going on here, that’s for sure, and though it’s not presented very delicately, I can’t deny the overall force of the flavors does not seem overly muddled. Certainly there is a high amount of flavor, with an appropriate texture. No alcohol noted in aroma or flavor.
