Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.
"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.
Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.
Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

Bottle. Color: Clear golden, white head. Aroma: Fruity, funky. Taste: Well balanced mix of fruity unripe grape, green apple and citrus, oak wood, barnyard funk, vinuous / Cognac hints and lactic acidity. Over moderate tartness, some vinegar notes. Medium body, below average carbonation. Dry-ish finish. Needs some time to open up. Nice.

1991 bottle that I got in a trade. Rated in May 2017. Cap was rusted, cork completely dissolved. Decanted it. Color was a deep orange-bronze and very clear except the part that was left in the bottle, which was gross looking. Very oxidized, musty aroma, old books, lemon, wet wood with a bit of rot in it, leather, peaches. Body was very oily, flat, silky smooth, full. Favor less musty than the nose, some honey, lemon, leather, old books, wood, cork. This definitely was past it prime, and I suppose I should have opened it when I first got it, but still it has help up remarkably well for a 26 year old gueuze. I look forward to trying the new one in 2019.

Bottle: Poured a purple/pink/ish color lambic with a small foamy head with limited retention and lacing.Aroma of tart notes with fresh juicy grapes and some light barnyard notes. Taste is also a good mix of tart notes with some juicy grape notes, some barn yard notes and a light sour finish with no noted acidity. Body is about average with good carbonation. A really enjoyable mix of lambic and grapes makes for a complex but highly drinkable beer.
