Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.
"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.
Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.
Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

Ausgeglichene säuerlicher aber auch etwas süßer Antrunk; der Hopfen und später die Bitterkeit stechen hervor. Beim anschließenden Abflachen des Bieres bleibt die Säuerlichkeit noch im Hintergrund vorhanden. Ausgewogen, stimmig, sehr harmonisch. Zum Ende allerdings zu flach. /11/12/12/12/11

CBF07 sample from bottle at the RB table. Pours hazy pink with a white lacing. Aroma is sour and fruity. Flavour is very bitter and dry. Finish is dry berries.

I can almost copy the rating of mesandsim actually. I met Jacob already the week before in Olbaren and we shared some nice bottles over there. But I wasn’t introduced to his private beer cellar yet. It seems that this ’bogan’ (why a bogan? although he wears metal bands- or (bad) beer t-shirts, he IS (trying to get) educated :P) has still got like 30 bottles of the retired Belle Vue Selection Lambic in his cellar. Anyways, he was happy to share some more beers in Plan B. And ofcourse I don’t want to be impolite turning such offers down ;). Hazy orange color, short head. Aroma of tart gueuze, horseblanket, oak wood. Sour tart taste, bit sweet, oak wood again. Good gueuze! Satan bless these friendly Danes!

750ml bottle@Kristiansand lambic festival. 2002 compared with 2003 version (drunk 2007). Golden body with a huge white head. Aroma is acid, but more fruity than usually. Flavor is really fresh and extremely well balanced, this is a really smooth geuze. Its sour and dry with a tart aftertaste. Very nice and easy to pair with spicy sea food. 2002 version is more matured and harmonic than 2003.

Draught Slight transparant rim over ochre beer with a slight mossy shine. Peach, or other fruit (raspberry?), horseblanket, lemon, wood. Also some banana ester. Really dry (beer is a bit over 1 year, which is relatively young "old lambic"), which is remarkable. Lemon, lemonrind, dry as bones, or as chewing wood. Relatively light-bodied lambic, which is another proof that the fermentation is far gone. Cantillon has very busy beasts. Nice lambic.

Hazy reddish color, short off-white head. Aroma is tart, fruity of cherries and grapes, some marzipan. Nice fruity taste, soft sweet and slight tart, some oak.

Bottle. Rating #1500. Pours a hazy golden color with almost no head. Sweet fruity sour tart aroma with some hints of muscat grapes. Sweet tart sour malty flavor with hints of grapes. Sweet tart finish with a sour aftertaste.

2001 bottle. Pours a slightly hazy golden color with a small white head. Has a tart fruity barnyard aroma with some hints of wood. Tart smooth malty flavor with some acidic hints and hints of wood. Has a smooth tart malty finish. Very nice.
