Fermenting since 2014 with only wild brattleboro mixed culture yeast. continually pushing boundaries of new sour beer. brewhouse fueled by wood, not fossils.

To truly understand terroir and wild yeast, a brewer must come to terms with the type of beer that “wants to be made” in their region. We are proud of Brattleboro’s wild yeast for its balance, its stone fruit and pecan character, and how dry and effervescent it leaves the beer. We are grateful to our region’s farms for the availability of world class hops and fruits, as well as to our area distilleries for unique and beautiful oak barrel flavor histories.

We delight in making beer that could only be made in our place, with our team, supported by our community and environment.

16 oz. can purchased at CBC Waterbury, VT. Dirty orange in color with low carbonation. Aroma is mostly Brettanomyces Claussenii with notes of vinegar. Oh boy... Why did I buy this?

Flavor about what you would expect, a mega ton of Brett C, notes of Band-aid, steady amount of lactic acid. Gives me heart burn. Although I have enjoyed some Brett IPA’s in the past, I am not a huge fan of this.

T42 tasting on me Birfaday. Can thanks to Leighton. Hazy gold beer, small and short lived white head. Palate is light and semi dry, good fine carbonation. Smooth pale malts. Great punchy peach with some white wine in it’s corner. Mild sherbet. Light dry finish. My kinda sour.

This was poured into a tulip.
The appearance was a hazy yellow milky color. No head, no lace.
The aroma starts with crisp sour to tart lime juice up front. Some sticky pulp with a subtle sweetness underneath. Sly grassiness. Some pine.
The flavor starts sour lime/citrus sticky pulp. Pine comes back slightly. Sticky lime juicy aftertaste and big sour finish.
On the palate, this one sat about a light to medium on the body with a decent sticky sipping quality about it. Low carbonation.
Overall, a whole lot of lime juice in this with a fair amount of dry hopping. Good for what it is and I could see myself coming back to in the warmer months.

Though not a whale, just glad to have finally tried this.
This was poured into a tulip.
The appearance was a ruddy burnt orange leaning to a brown color. Sly transparency to it. But I can’t see the carbonation, no worries.
Head dissipates immediately. No lace.
The aroma takes in sour green apples with the normal dried clever Hermit Thrush woodiness to it. Red raspberries slide in underneath.
The flavor brings it all together in a sour manner initially and then dryly slides into a quick aftertaste and finish.
On the palate, this one sat about a light to medium on the body with a decent sessionability about it. Carbonation seems good. Not as syrupy as some of their other beers.
Overall, good beer for the most part. I could have this again.

Draught at Tip Tap Room, 9/13/16.
Lightly to moderately hazy, brassy-golden with a small-to-medium-sized white head atop that shows moderately-low retention.
Brett and lactic acids comprise the nose, being fairly soft though with a good deal of strong fruitiness from the brett (lime, hickory, light band aid). Some malt behind it adds just a touch of honey, which is greatly appreciated, and there is no big oakiness/toastiness, just a healthy dose of wood/tannin. The saison characteristics are pretty thin, but then, I don’t really consider any of their "saisons" to be actual saisons. Just a nicely done American sour here, though not heavy on the sourness.
Good carbonation, fairly tight and engaging, with a light, malty and wood tannin-laden texture. Soft honey-vanilla helps balance the light sourness, that pulls mostly lactic acid in to the fold, avoiding any big acetic notes. Bright brett fruitiness lingers on the finish, with no alcohol or flaw.
