Draught at the brewery, 9/8/15.
Minimally hazy amber-copper body has a medium-sized white head that slowly recedes to cover.
Fuzzy fruit skin-like notes in the nose with lime, orange, cherry and a caramel-pine thing going on as well. As with all Schilling beers, malty but nicely attenuated and though there’s a suggestion of resin here, it’s not anything problematic. Gets fruitier and maltier with warming.
Very well-hopped, leading to light pine, cherry and dry pineapple with softer Belgian esters underneath. Kind of on the fence about this hop. While there are a good mix of fruity flavors including some lighter, more enjoyable tropical fruits, there’s also a good deal of bitterness taken just a bit too far, I think. Nonetheless, a malty, but yet mostly dry body and appropriate, tight carbonation help mitigate this somewhat. Clean, as always.

Draught at the brewery, 9/8/15.
Lightly to moderately hazy golden/straw colored liquid has a small but moderately well-retained white head atop.
Big brett nose is full of lime and lemon zest notes, with guava, strawberry and other random brett-driven fruit notes. Not incredibly funky yet, but getting there, with light mustiness and yet some levity from the citrus character. No alcohol or flaws.
Maltiness shows through immediately, while tart lime-like brett notes sink in to the corners of the palate and a good balance between honey and citrus is achieved. Soft funk and light cheesiness, with some stronger acidity building on the end. Fruitiness continues to evolve, with all sorts of different flavors. Low but fairly tight carbonation and very, very drinkable. Reminds me a good deal of Enlightenment’s saisons.

Draught at Schilling, 9/8/15.
Moderately-to-lightly hazy body is a bright golden with strong marigold resemblances. White head is small yet dense and persistent, remaining at cover.
Wonderfully lactic nose is incredibly bright with a perfect amount of coriander in the background, light malt sugars adding honey notes and a wonderful salt-meets-yogurt finish (not that that sounds terribly delightful).
Lactic, sour and with a perfectly engaging, tight carbonation that refreshes and keeps it light. Soft honey, floral notes, vanilla and biscuity/chewy wheat notes all provide ample substance. While it dosent have the funk/complexity of Oxbow’s Saison dell’Arragosta, it’s one of the brightest, most refreshing examples I’ve had, with the salt pretty minimal (I find too much of that to be counterproductive). Really, really nicely developed lactobacillus profile here and a delicious malt flavor and texture to boot. No alcohol nor flaws. Got a growler to go.

Draught at Publick House, 8/12/15.
Dark hazelnut with nice bronze tints, good clarity and a small but well-retained beige head.
Nuttiness, very spicy hop notes, light chocolate-creme and a crisp, dry finish highlight this modest and very clean aroma. Really nice to not see, "for this tmavy, we thought we’d put a twist on a classic and use American hops." The twist, nowadays, is that you used European hops in your classic European style.
Light chocolate and nougat notes are immediately ushered out the door in place of delightfully spicy, herbal, zesty hop notes. Average, appropriate bittetness, ample carbonation and a very nicely attenuated medium body. A bit of buttercream-like maltiness returns on the finish but the snappy hops keep it quite refreshing. A really nice drinking beer if you still want a little more malt presence. Flawless and wonderfully well-made.

750 ml bottle, provided by Adam from the brewer a Schilling, awesome. Thanks for the opportunity! Aroma is almost like a spiced cola. Sugar, and a mild spicy yeast. Interesting.

The flavor is nearly a Abby Dubbel like profile, massive malt and hast profile. Caramel, light roast, pumpernickel bread. Total reminds me of a Dubbel. Nice, easy to drink.

Draught at the Publick House, 6/25/15
Clear, nicely bright pale yellow with a tint of light brassy-copper. Large, foamy white head shows moderate retention.
Unbelievably well-done hops in the nose are a very authentic mix of dried herbs, hay, fresh cut grass and yet allow light bread dough, toasted baguette and bits of honey to break through, balancing perfectly. Clean, crisp and would almost certainly guess this to be Czech if tasted blindly.
The flavor is even more impressive than the nose, which is saying alot. Cheesey, almost sweaty corn-like notes are produced from the hop and malt interplay, with dry, heavily herbal bitterness and zestiness. Soft, malty body with lively, tight carbonation that, in concert with the bitterness, clears the palate on the end. Honey, toasted sourdough and bits of rich butter (not diacetyl) all provide immense flavors in such a small beer.
Amongst several Allagash beers, Backacre Golden and two Kent Falls beers, this easily stole the show. Great, great brewery and I hope to get back there again soon.

Great clarity. a pale burnt orange. minimal head but white ring. Not a lot of aroma on this one but that’s probaby because it was filled to the top of the glass.. Sort of an oatmeal, munich malt taste. good yeast presence. ginger, lemon, hay and wheat with a spicy yeast presence. finish is clean with a nice oat, barley taste.
