Founded in 1990, Le Bilboquet is one of the first microbreweries in Quebec. Since then, it has never stopped innovating to offer to its consumers a wide variety of exceptional beers. Le Bilboquet specializes in the production of craft beers, including unfiltered and aged beers.

Effluves de Bourbon caramélisées, toffee intense, accents toastés, esters de fruits rouges dont la cerise et doux accents de fruits noirs rappelant les pruneaux dans un olfactif puissant et complexe. Liquide brun aux reflets roux parfaitement limpide. Mouse d’épaisseur moyenne qui descend plutôt rapidement. Caramel dominant la bouche et bien enrobé de Bourbon. Esters de cerises et de fruits noirs. Boisé de barrique. Houblons doucement terreux et épicés. Le corps est rond et sensuel et l’alcool superbement bien dosé. Cette bière est un vrai caramel liquide avec un enrobage de Bourbon qui lui donne puissance et complexité. Un classique et grand cru du répertoire Québécois. O:8.77V:4.38 G:7.97 C:5.0 G:18.13 T:44.25

Pours a clean, amber colour with a pinkish hue, a whitish head, average stay and some foamy lacing. Mild, fresh raspberries that offer some light sourness and tartiness in the nose, over the wheat base. The raspberries show up a touch more in the taste with the fruitiness and mild tartiness. Quite a mild smelling, tasting raspberry Witbier, but does taste quite truly fruity, and not essency.

Poured from 473mL can (pkg 24 July 24). Clear auburn brown with small beige head. Woody caramel malt, feint honey, mild phenols come to the forefront as it warms giviing a dubbel quality to the scotch ale. Decent.

Amber-brown, and bright. Medium head. On the nose, some bubblegum, and this also has a bit of toffee. On the palate, it's cleaner but still some phenols that drag it down. Lowish bitterness, so you really want lots of rich malt character, and I don't get quite enough of that. Touch of honey sweetness in the finish, but doesn't help me get past the phenols.

16oz (thx, Josh!) @ Sales Force. Appearance: dark copper with a beige head. Aroma: caramel, figs, some raisins. Taste: along the same lines with some bitterness. Overall: ok.

Notes from September 2012 $7 bottle from New Beer. Ommegang chalice sorta thingie. While waiting for this frozen lake of a head to settle, I guess I'll start to review it. Micro-beaded, incredibly dense custard foam. Dark, cloudy amber body. Smells of condensed milk & sticky spilled beer. Tastes of lightly burnt sugar/marzipan & black tea. Light ale fruitiness, crusty bread. Semi-dry finish. Carbonation is on the low side, but at least the body isn't too heavy. Thought it be better.

16oz can from Halftime. Hazy orange pour, thin, patchy, finely beaded head. Aroma is tropical fruit and citrus. Taste is fruity, mango, lemon, melon with a mellow tartness that catches more in the throat than on the palate. Smooth, light floral notes.

Mildly hazy, golden colour with a warm-whitish head, decent stay and lots of foamy lacing spots. West Coast grassy aromas with a light caramel base. Some citrus notes do come out to blend in the NEIPA-style. Getting a balance of grassiness and citrus in the taste. The mouthfeel is wet with a lightly, drying finish. A nice refreshing DDH IPA with a mix of both coasts, but maybe a little more Westy than Easty.
