Description
Holy Mountain is a brewery and taproom located in the Interbay neighborhood of Seattle, founded by co-owners Colin Lenfesty and Mike Murphy in 2014. The influence of oak has always been the focus of the majority of beers brewed at Holy Mountain. A sizable building near the Seattle waterfront has allowed the team to build a vast stock of oak barrels, puncheons, and foudres used for both primary fermentation as well as long-term aging.

The proximity of the brewery to the Yakima Valley also allows the team of brewers to utilize hops from the best producers in the world, constantly exploring the relationship between hops, oak, and mixed fermentation. Holy Mountain doesn't offer any year-round beers, which creates an ever-changing lineup in the brewery taproom. In addition to oak-influenced beers, Holy Mountain also offers a wide range of rotating, hop-forward ales and lagers.

Pint at Toronado. Clear golden color. Moderate bitter Saaz aroma, more bitter than I want it. Some earthy lagered malts. Well lagered without metallic character. Faint floral fruitiness. Mouthfeel is dry and mine rally, moderate carbonation. Lots of hops and white bready malts. A bit thicker on the back end. Not sweet. I want it to be a little less bitter and a little crisper on the backend.

Draft at Pine Box in Seattle for the Holy Mountain debut event. 6oz poured into a 12oz tulip-globe glass. Black beer, not much on head and lacing. Its a nice, well attenuated beer. There is a bit of acidity on the nose but not so much on palate. Roasted flavors, light prune, but not too strong on anything. Lower hop level, which I highly support. A nice sweet but unsugary finish to the beer. Even a faint fruit/ester character at the end. The finish is my favorite part of the beer. I would love to see future iterations of this imperial stout, its got so many positive going for it and none of the trappings of many new big impy stouts. I also wonder if its a British yeast being used. Either way, I would rather try the next batch of the un-oaked version rather than another barrel aged, adjunct-added imperial stout.

Draft at Pine Box in Seattle for the Holy Mountain debut event. 12oz tulip-globe glass. Appearance is super thick and cloudy, can’t see thought it. Very pale hay color. Definitely needs some fining. Aroma is a cool mix of hops. Some esters that blend nicely as well. I like the tropical mix of the hops and esters. However, that is quickly overwhelmed by a bitter hop aroma. Flavor losses most of the tropical fruitiness and becomes more of a hop driven bitter flavor backed up by some Belgian, lightly doughy, biscuit malts. The malts are a bit messy, have a muffled feel. Ends with a bitterness. Its a decent first commercial stab and I expect that it will be refined with further iterations.

Draft pour at Toronado. Pours a super cloudy hazy dark orange color with no head. Huge grapefruit aroma with some hops. Bitter grainy flavor with some hops and fruit. Kind of a dry beer. This beer is decent. Nice citrus flavor to it. Overall I liked it. Will look into this brewery more for sure.
