Description
The Schneeeule Brewery was founded in 2016 by Master Brewer Dipl. Ing. Ulrike Genz. After years of developing the recipe and thorough scientific study of the topic of the Berliner Weisse as a part of her Degree at the TU Berlin, in the spring of 2016 it was finally time and the brewery Schneeeule Berlin was founded. Finally, Berlin has a brewery producing original Berliner Weissr. The goal of the Schneeeule Brewery is nothing less than to give Berlin a piece of it’s culture back: Berliner Weisse. After both devastating world wars, the beer once known far beyond Berlin’s borders as the “Champagne of the North” is now almost only available as barely drinkable mass produced industrial beer. The reputation of the once National Drink of Berlin has been ruined. Master Brewer Ulrike Genz is doing her utmost to change this and to return the Weisse where it belongs; in every Bar and Restaurant worth its name in Berlin, and in a proper glass. All Beers brewed by the Schneeeule Brewery are bottle fermented with Brettanomyces and have matured in the bottle for at least 2 months. Just as it was done 150 years ago.

From bottle outside De Bierkoning, Amsterdam, during Carnivale Brettanomyces 2017. Aroma is bready wheat, dough, lemon, and elderberries. Flavour is mildly sour. Body is light with heavy carbonation. Enjoyable Berliner.

0.75l bottle, courtesy of Jonas, big thanks! Hazy pale golden body, the head disappearing quickly. Dry, funky, bretty aroma, fairly elegant. Lean, dry, sweetish taste, citric, ending juicy, dry. Slightly on the astringent side of tartness, but tasty enough for that not to bee too relevant!

Bottle courtesy of Jonas, had this in the company of Jonas, Ursula and Marko Saturday 8th February 2025 at home, Manglham. Pours dark straw colour with a little haze. Super refreshing, a real zappy workout for the mouth, sharp, mouth puckering, tart, there is a lemon and a little sour cream edge. I like this.

Bottle, thanks Jonas! Applejuice, slightly cloudy. Herbal, tea, flower. Refreshing, dry, fruity. Light. Sour. Nice.

Bottle at Café Abseits, Bamberg. Citrussy aroma with Bretty notes, wheat, and tart lemon. Tart and medium sour flavour, light body. The Brett adds some welcome complexity to the Berliner base. Nice one.

From tap at In De Wildeman, Amsterdam. Aroma is doughy wheat with citrus, lemon, funky notes, and some barnyard. Flavour is nicely sour. Drinks more sturdy than its 3% abv. Refreshing, citrussy and crisp. Solid.

Bottle from Bierkoning, Amsterdam. Aroma is wheaty and fruity with apricot, some funky notes, citrus. Grainy, mild sour, tart, bit funky. Good body for the low abv. Really nice.

From tap at Foeders, Amsterdam. Lacto sourness with an aroma of lemon, some funk. Tart and medium sour, light with some complexity. Good stuff.

Bottle from Drankenhandel Leiden. Aroma is spicy and citrussy with sour lemon, citrus peel, ginger, chili pepper, wheat. Tart and medium sour flavour with a respectable chili burn. Light body. Pushes the right buttons for me.

Kickstarter bottle drunk with some pasta after mounting a few sound panels in the dining room. Pale as unfiltered pear juice, little head big big carb. Smooth sour nose. Flavor is full and reminds me of stone fruit though there is none. Quite sour, complex with moderate bitterness, tasty.
