Description
The reason Jamie Emmerson and Irene Firmat started Full Sail in the first place was to build a company that was completely different from the ones where we’d previously worked. It wasn’t about business as usual. It was about finding our calling in life — about truly appreciating our “human resources,” and balancing work, life, family and friends in a way that makes life truly worth living.

Determined to make world-class beer in our own backyard, one of our first, and perhaps best, decisions was to invest in new, state-of-the-art brewing equipment. So we bit the bullet, laid down our borrowed cash, and spent the better part of 1987 installing the new system. Our love for the environment is what drives our sustainable practices, so pure water, local ingredients and responsible processes are poured into each and every tasty pint.

Bottle Pours a deep dark brown/black with a modest sized but very dense fine light brown head. Lasting and creamy. The lacing is thin due to the extremely fine bubbles and sheets down the sides of the glass slowly, reluctantly breaking its hold as it returns from whence it came. Aroma is intoxicating. Sweet, vanilla and yes, coconut. Almost reminecent of an Almond Joy. The bourbon aroma is there but not very strong. Flavors are at first in your face dark roasted and bourbon. After that is more chocolate, coconut, the alcohol fumes up a bit and then the balancing bitterness. Even later the mellow woody boubon barrel smoothes it all over. The feel is a bit thinner than I hoped and expected but this tastes great. I will definately hoard a few of these for later to see how it ages. Supurb.

Another beer that is disheartening to see the reviews for. Especially given that most people provide positive comments and then give it about a 2.5.
2005 bottle shared by OldGrowth on 2/25/06. Valiant appearance, large amount of well-retained, very aerated white head clings to the sides, even creating minor lacing, while a brilliantly clear golden-to-light-amber body is full of carbonation. The nose rises up with a challenging amount of hoppiness, grassy and even lightly spicy notes combine with soft honey, perhaps just a touch of appleskins and plenty of lemony notes. The hops are not complex in the nose, but nor does the style dictate that. This is about as hoppy as it gets, though it still remains dry and under control.
Flavor is surprisingly clean, very crisp throughout, with plenty of honey notes from a wonderfully extracted and appropriated pils malt. Dry and bitter hop notes, light grass clippings, hay and even a hint of dry tangerines and light grapefruit. Moderate carbonation, well-to-style, with an actual palate that is ever so faintly doughy. No wateriness whatsoever, and challenging and interesting to the last drop. Very clean flavor, with all malt and hops notes. No alcohol, of course, and a crisp yeast bite on end. Perfect balance. Only thing keeping it in check somewhat, is the mild appleskin note in the aroma. Thanks Tom, I think I found my new session beer, too bad I live in Boston.

Bottle. Rich copper amber with an off-white head. Big pine resin aroma with caramel backing. Pine resin flavor with some grapefruit and caramel. Lighter body than expected. Nice flavor, but would be better if bitterness lingered a little longer.

Black pour that holds up a tan head. Coffee and roast malt aroma. Rich, full, smooth body that delivers a complex coffee and chocolate flavor that fades slowly to a dry finish. Good robust Porter

Draft. Amber/copper color with a small light beige head. Light fruity aroma. very light body and easy driniing. Fruity flavor with a bit of malt. Somewhat astringent. Blah.

Lack of erupting head made me wonder if I’d squandered my Duvel glass. Aroma of apple, raw sugar and light banana with a fair amount of alcohol. Flavours of strong apple and alcohol, with light esters, lots of syrupy malts and muted yeast notes. Thick, cloying body. Not a drain pour or anything, but a bit disappointing.

Deep black coloured porter with moka head. Sweet chocolate notes of raisins and prunes, and floral hops. Dry chocolate with lactic notes and sustained bitterness, roasted coffee, and light alcohol. Rich bodied. Very nice. May 2005.

Very bright golden-amber colour. The aroma is orangey, biscuity, kumquaty with a breadcrusty background. Mild hop-accented character with an ashy, slighlty astringent bitterness, mere hints of orange and a firm but simplistic pale malt note. A very basic, serviceable IPA but nothing more.

Big citrus — grapefruit — aroma with a note of pine. The flavor was 99 percent hops. It started with floral hops with an medium perfume tone. But that flavor gave way to grapefruit and pine. The malt is hardly detectable. The finish was pleasantly bitter. Overall, a bit above average.

2004. Thanks to Wohlfs for this! Deep amber body under a smallish off white head. Pleasant, but somewhat subdued, well balanced aroma of caramel and hops. The flavor follows the aroma precisely. Well done, but maybe my palate was expecting something with more intensity than this one. Re-rate 2004 from cellar opened on 1/15/12 Smoothed out nicely. Hops are only bitterness now.
