Description
The reason Jamie Emmerson and Irene Firmat started Full Sail in the first place was to build a company that was completely different from the ones where we’d previously worked. It wasn’t about business as usual. It was about finding our calling in life — about truly appreciating our “human resources,” and balancing work, life, family and friends in a way that makes life truly worth living.

Determined to make world-class beer in our own backyard, one of our first, and perhaps best, decisions was to invest in new, state-of-the-art brewing equipment. So we bit the bullet, laid down our borrowed cash, and spent the better part of 1987 installing the new system. Our love for the environment is what drives our sustainable practices, so pure water, local ingredients and responsible processes are poured into each and every tasty pint.

Bottle Piours a hazy light orange amber. Small off white head quickly dissipating. Slight lacing. Nose of faint light yeast and some classic Belgian componants of clocves, bananas etc. Flavor is sharp and sweet. A bit sour as well and yeasty. Moderate body and carbonation.

Sampler from bottle. Don’t know how old this taste was, but it’s from a pretty dusty bottle. Syrupy smell from aged beer. Spices up front, but diminishing while the alcohol nose increases. Also has a big chocolate note. Holds up nicely.

Bright middle of the road amber colour. A bit of apricot and hints of leafy hops alongside slightly toasty malts in the aroma. There’s a surprisingly bold mint note as well. The palate is certainly hoppier than the aroma hinted, with moderate bitterness and earthy, foresty accents (and lots of mint, still). Balancing malts have a slightly toasty accent. Alcohol comes in late, with a dull thud rather than hot or peppery, which I might have enjoyed. OK, so it’s not a masterpiece, but it’s a competent hoppy ale that is aimed squarely at Full Sail’s existing audience.

Draft. Clear copper/amber beer with a good whitish head. Subdued citrus aroma. Flowery-citrus hop flavor with some malt backing. Not as overly hopped as many wet/fresh hop beers and it just doesn’t bring enough.

On draught at Falling Rock, 9/30/2005. Served in a shaker, it has a light peach-fuzz yellow color to it, with a smattering of white head atop, not very abundant and recedes to a ring fairly quickly. Beer is clear, with moderate sized bubbles rising. Aroma has a nice, soft yellow fruits and light pale malt sugariness. Light tangerines, nectarines, peaches and fresh apricot juice, with an aromatic floral nature. Overall, not a tremendously strong aroma. Flavor continues with the fruit, adding more tangerines and nectarines, with a medium to medium-light body, gentle and supportive of the moderate hops. A moderate carbonation, lively, touch watery texture confirm that this is indeed a simple, session ipa. Not too dry or too bland, however, the hops are refreshing and present enough to satisfy me.

An orange beer with a lazing off-white head. The aroma is sweet caramelic with light alcohol notes. The flavor is sweet caramelic with light hop notes, giving it a dry end.

Clean balance between hops and malts. The aroma leaned toward the malts, but the taste was of hops with an undercurrent of sweet malts. Dry and crisp mouthfeel from this medium-bodied, light amber brew. Soft bitter aftertaste.

This amber pours dark copper with a nice off-white head. Its aroma is full of malts. The flavor is sweet — caramel, nuts — with a roasted, floral bitter finish attesting to the western hops. A rich, full mouthfeel, much thicker than other ambers.

Poured dark amber with thick head. Strong citrus aroma, specifically oranges and grapefruit. Hop flavor and bitterness predominated with a slight malt balance.
