Description
Chimay is an authentic Trappist beer: this means that it is brewed within the walls of a Trappist monastery, under the control and responsibility of the community of monks, who are involved through the process of making and marketing the beer. Most of the income generated by this activity is devoted to the needs of the community and social works.

The brewery was founded inside Scourmont Abbey, in the Belgian municipality of Chimay in 1862. Since the seventies the beer is transported from the monastery to the bottling plant 12 km away at Baileux, where also the cheese factory and a visitor center are located. The beer is then refermented in the bottle for three weeks before being shipped around the world. 50% of Chimay beer production is sold on the export markets. The brewing plant was updated in 1988.

Bottle, 2024 vintage. Bready malt aroma with notes of dark fruit, banana, clove, grassy hops, spicy Belgian yeast and cereal malt. Pours cloudy amber colored with a thin off white head that has little retention and some lacing. Starts with bready malt, dark fruit, clove and cereal malt flavors. Finishes smooth and a touch dry with banana, spicy Belgian yeast and grassy hop flavors. Delicious.

750 ml bottle. Pours a bright amber with moderate head. Aromas of fruity Belgian yeast, dried stoned fruit, and toasted malts. Flavors follow same with andditional coriander and some phenolics; plus more grainy malts. Good.

750mL bottle, pours a hazy pale golden with a medium white head. Aroma is plenty of spicy Belgian yeast, a touch of liquorice, fennel, and dry bready malt. Flavour is full of spicy Belgian yeast, fennel, some black liquorice, and dry bready malt. Nice spicy expression as expected, finishing dry and spicy. Excellent.

Pouring from a 37.5 cl bottle to a Chimay glass. I see a dark caramel body along with a thin ring of taupe foam. The hoped-for carbonation is there. I lift for a smell and get dried fruit, grain, wood and yeast. The taste is subdued, there is dried dark fruit, malt, wheat bread, a hint of red cherries, and an indication of the barrel. Good but not great. I may have waited too long to open this one.

375ml bottle, corked with a wire cage. Beer gift from Frau Eva. Shared at a rating session with Finn and Leif. A deep copper coloured body, off-white head leaving crocheted lacing on the glass. Attractive aromas of rum and mid-sweet brown malts. Rather intense taste of rum, oak and caramel malts added by a subdued yeasty bite. Long-lived finish, mid-dry, and warming. 2025 version, Bruxelles café Lausanne with Raoul, a good classic on the Belgian way, boozy, medium body, malty, smooth with a right touch of plum, yeasty and bitter, well balanced, never boring with this one.

Bottle from Liquor Mountain. Pours a glowing deep orange-gold with a tall, thick head. Fruity, spicy aroma, citrus, apricot and nectarine, honey, coriander, cloves, esters. Great. Sweet, rich flavor with stewed apricots, clove, grapefruit and orange, honey biscuits. Lovely stuff. Quite starkly bitter finish to balance it all. Full body but not cloying or lagging on the tongue.
