High, off-white head. Dark red beer. Leaves nice lacing.
Aroma: a lot of dark bread, plum, red apple, baked apples.
Bock-like taste with the bitterness of slightly burnt bread.
Frothy in mouth, carbonation is medium. Very warm on throat despite being only 7% ABV.

A very dark reddish brown beer, a head is big and beige. Aroma has dried fruitness, raisin, also fresher fruits, perries. Taste has dried fruitness, some barrel, perries, why not also brandy. Medium+ bodied, high carbonation. This is very good version, surprisingly fresh.

750 ml bottle. Pours brown with light head. Aromas of dried fruit, thin boozy brandy, oak, a bit of dry caramel and toasted malts. Flavors follow same with oak and booze prominent, and overloading the base beer. BA seems like apple brandy or calvados. Good, but way overpriced for the delivery.

Bottle to chalice.
Appearance: amber in color with a finger and a quarter of white foamy head which dissipated nicely to leave some light lace
Aroma: Belgian spices, coriander, some sweet apples, bananas, clove, apricots, herbal whiffs, slight floral then super light funk
Flavor: does a pretty good job of combining the prior noted aromas to a fairly good spicy to Belgian-like sweetness; finishes leaning into the bananas, apricots and floral tones
Texture: medium bodied, good sipper (and this is only a 4.8%-er! Woweee!); some smoothness but noted "Belgian-back-of-the-throat" grabby like dryness, it's quainter than other Chimays but still there and I expected it and was ready for it
Overall: another nice Chimay beer but also my last one of theirs until I can find more by them. Also, if this is the standard of patersbiers then all these Americanized ones I've been trying are way too watered down. Hence - my doubletake at some American brewers. Hmmmmmm....

Small bottle to chalice.
Appearance: dark golden to amber color with a finger's worth of white frothy head which took it's time to settle and once it did some light messy lace stuck to the glass
Aroma: iced apples, bananas, clove, Belgian spices, honey-ed biscuits, herbal, subtle mint and a touch of sweet earthy tones
Flavor: meshes the prior noted aromas to a fine sweet herbal/floral tone to a light spicy Belgian toned quality complimented by some clove and mint; finishes semi-minty with the iced apples, an over ripe sort of vibe from those bananas and the clove seems a bit crushed now
Texture: medium bodied, this is a sipper; "Belgian"-smooth here and that "back-of-the-throat" grabbiness is pretty scaled back here than many other Belgian strong ales I've had but you know what - yeah, I didn't mind it; however, I think this one is just a wee bit "stickier" than some other Chimay beers I've had
Overall: what a beer! What else do I have to say other than I'm kinda mad at myself that I didn't hang on to this longer because I can only imagine what it'll be like with more age on it.

Tap at FOB, Rimini, Italy. Pours orange gold, towards amber, medium hazy, with very fine white foam. Aroma is a little fruity, spiced. Body is average, with moderate carbonation. Taste is medium sweet, balanced by a hint of bitterness and of oxidation. Final is just above average intensity.
