At Totem, we try to brew beers very much in the same way most Belgians wouldn't.

20 June 2025. “Iets voor den Erwin” @ Dracuna. Cheers to the whole GBV crew!
Carré confiture, raspberry coulis, unripe strawberry, almond, wheat, redcurrant. Sweetish-sour redcurrant and raspberry, sweetish jam with a touch of vanilla. Dry finish of berry skin & raspberry seed. Light to medium body. Straightforward, perhaps, but so elegantly executed.

(and again from draft at Kwatrechts Bierfestival on 27/IX/25)
Cloudy yellow to orange beige beer, dense creamy off-white head, pretty stable, a little adhesive. Aroma: lovely, very old school American IPA (like 2010’s), fruity notes, a metallic touch, melons, some watermelon, resinous and piny, passion fruits, some citrus nice! MF: soft carbon, medium body. Taste: nice, pretty acidic in the start, then very quickly rather bitter, grapefruit, lots of grapefruit, passion fruit as well, papaya and mango, very juicy, zesty, nice! Aftertaste: fruity, good bitterness, juicy, dry, zesty, more grapefruit, pretty acidic finish, very drinkable, lovely stuff!

Pours black, darkly tanned, small head fades very quickly. Scent is roasty, very slightly ashy. Hidden barrel. Dont get the speculoos just yet. Taste is full , fairly sweet. Mild ashy , very roasty. Speculaas mildly present in the back. Barrels get a bit more expressive towards the end, but start very background. Low carbonation. Very decent, but I assume this one has peaked...

Can at home shared with Laura. Bright darker red color, virtually no head. Aroma is weird, it reminds me of pudding, desserts. Fruit, yoghurt, sweetness and distant chocolaty notes. Flavor is sour and red fruit. Berries mainly imo. Berry juice. Not my thing but I think it is what the label says, so we'll done.

Pours very dark brown with a huge tanned head of medium good stability. Scent is quite ashy, lactose, almost a bit metallic, BE (bit stressed) yeast profile. Remembering one of my homebrews trough this ;) Taste is roasty, bit ashy, very carbonated, dominant yeast slickness, esters, bit stress, making it fairly oily-chewy coffee-with-milk like. Overcarbonated and not really my thing at all. I had this happening to one of my homebrews as well - even though Totem are much better brewers than I'll ever be, but this one doesn't really cut it for me. Truth be told, it's a few years past it's BBD, and it shows little to no negative age factors, its just the overcarbonation and yeast vs roast balance that does it for me.
