Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Clear dark brown beer, creamy irregular beige head, little stable, non adhesive. Aroma: citrus, piny, resinous, bit sourish, fruity touch, complex, little sweet, caramel. MF: ok carbon, medium to full body. Taste: very bitter, fruity, hoppy, more citrus, caramel, little sweet. Aftertaste: bitter, resinous, very hoppy, bit fruity, piny, caramel, resinous, dried fruits. Nice job!

Black color brownish head. The aroma is strong, roasted malt and doughy dark bread. Strong body flavor; roasted malt and dark chocolate flavor, not burnt, with strong resiny hops. Powerful.

Les Trois 8, Paris tap: I wish I knew that this beer wasn’t previously on ratebeer. I would have jotted down more details, as there doesn’t seem to be much info about his anywhere on the net. Anyway, Pours golden with a white head. Light apricot and farmhouse funk and spice. Taste is really minerally with a lot of spice and funk. Gets better the longer it sticks around.

Cloudy but bright light amber color, medium sized compact head. Very nice aroma of fruity hops; sweet oranges, light cedar, plums, mango. Dry mouthfeel, weaker than expected; the malt profile is simple; strong bitterness, strong resiny hops, a bit fruity; too much yeast, and some vegetables.
Nice beer, a bit too dirty.

330mL bottle, pours an opaque dark orange with a small off-white head. Nose is very malty and yeasty, with caramel malts, yeast, and some earthy hops. Flavour is quite odd, with earthy hops, muted muffled yeasty notes, and earthy bready malt. Very confused flavours, with a very yeasty, dry bready finish that doesn't sit too well. Doesn't emulate its North American counterparts too skillfully. It's okay, but nothing impressive.

Les trois 8, paris: pours black with tan head. Aroma is chocolate and raspberries. Taste is slightly tart with chocolate notes. Anlittle bit of sweetness. Tattness towards the end and into the aftertaste. Pretty good actually.
