Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

On tap at Haandbryggeriet Beer Festival. Close to black with a fairly modest, bubbely beige head. Mild roasty notes with dark fruits, salty licorice, pine and hints of herbs. Medium sweet with a fairly balanced mixture of dark malty and hoppy flavours with a fairly bitter finish. Bottle, at Haand Festival. It pours a next to black body topped by a finger-thick tan head. The aroma has roasted malts, coffee, some dark chocolate and a nice piney, resiny hoppyness. Grassy hints too. It’s bitter and roasted on the palate, soft and lightly warming, with pine cones, resins, dark chocolate notes and a coffee hint. Lasting finish. Even though I prefer the BIPA’s where the hops are showcased and the malts are subtle, this BIPA is certainly worth a revisit. 140524

On tap at Haand Festival. An almost clear, pale golden beer with a small, white head. The aroma is on the fruity side, with tropical fruit notes, lemon and oranges. There’s some bitterness in the flavor, it’s fruity and lightly herbal, with a metallic touch towards the end. Medium body, quite dry and with a nice carbonation level. Not a beer I can see myself buying again, but it was quite interesting anyway. 140524

On tap at Haand Festival. An almost clear, brown beer topped by a small, dense, light beige head. The aroma has oranges, some pine cones and cocoa, coffee and roasted malts. It’s dry and medium to thin bodied with a nice carbonation level. The flavor has a lovely blend of roasted malts and hops, leading to a lasting finish where the roasted malts and hops blend nicely. Some oranges, pine cones and cocoa too. Definitely a well brewed session BIPA. 140524

On tap at Haand Festival. A dark brown beer topped by a small, beige head. The aroma is roasted and lightly vinegar-ish, some lacto hints showing up, and with hints of bonfire and chocolate. The flavor has many of the same elements, but I’m not really sure if it really was vinegar and lacto I smelt. It’s medium bodied, soft and dry on the palate, quite low carbonation level. Roasted finish with a fruity touch. A very smooth and quite nice one. 140524

On tap at Haand Festival. A clear, pale golden beer with a small, white head. The aroms is sort of reminiscent of that of a Berliner Weisse, at least the lemony fruityness, and there’s also a faint touch of wet cardboard. It’s mediu-bodied, dry, tart and with a soft and low carbonation level. A generic fruityness and some lemony hints in the flavor, mostly fruity towards the very end. A quenching and interesting beer, rather unusual. 140524

Bottle from de Molen beershop, BB 01 07 16, large sample. Hazy yellow color, initially large rocky head but quickly diminishing to just some lacing, with quite some sound while imploding. Aroma is bit funky, bit citrus, some wheat, some pineapple, bit white wine like, slight grassy and piney hops. Soft to medium sour in taste, citrussy, bit sugary sweetness as well. Interesting stuff, I surely had to let it breath a little while, to get rid of some nasty odor, but the aroma definitely grew. Refreshing, although I must admit I had better.

Draft @ Tilquin English beer festival, 2015. Orangée, col blanc. Arôme est fruité et houblonné petite note de melon sur un léger rétro herbacé et fleuri. Palais est houblonné noble tirant fortement sur l’EKG ace un houblonné qui prend plus une place plus exotique. Fini sec avec une impression de pellette pour un profil très vert frais houblonné. C’est la 3ième version de ces bières de Mt Salève qui marque faire usage d’un houblon spécial mais où ce dernier, et son usage, semble être en retrait par rapport à la base houblonnée. Reste au demeurant une bière agréable à déguster.

Draft @ Tilquin English beer festival, 2015. Orangé, col fin blanc. Arôme est houblonné le tout ayant un bouquet fruité rappelant pas mal le jus d’orange, note d’agrumes. Palais est très houblonné, un peu résineux avec une pointe d’écorce d’orange et une amertume persistante sur un léger côté de pin - herbacé. Je n’ai franchement rien trouvé dans cette bière qui corresponde au caractère de ce houblon Barbe Rouge souvent décrit par sa puissance au niveau de baies rouges. Peut-être son rôle était en amérisant, mais j’ai plus retrouvé le profil d’une IPA mettant l’accent sur les agrumes. Reste complexe et très correcte.
