Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Cloudy yellow color with small head. Aroma is pure Sorachi Ace - dill! Herbal-tea, lemongrass, apricots. Taste is bitter and earthy-grassy. Very bitter-herbal finish, like chewing on a leaf of grass. Light body. Not a "good" beer, but interesting and good for your knowledge. And damn, the ABV is very low.

Pours somewhat hazy orange, excessive foam tat comes down slow. Aroma is fresh, apple fruitiness. Taste is also fruity but crisp and fresh. Hops are there but overall image is truly nice and refined. Very drinkable, fruity and has some bitterness. I’d love to have this by several pints. Could do that easily.

Draught Fluffy white head, very persistent over faintly hazy orange beer. Huge wave of fruity, citrussy hops/-oils, fresh hopcones, bit of ureum, straw. Light, but intense flavourprofile of dry, lightly cheesy hops, straw, dry leaves. Background has some faint sweetish cakey notes, banana. Light body, oily slickness. Bit flat MF. Another excellent, deceptively light appearing beer by Mont Salève. Phenomenal brewery, certainly for France.

bottle from Bièrerie Illkirch-Graffenstaden. Golden colour, with a white head. Intensive, unbelievable aroma of passion fruit. Good malty base, and more hops with passion fruit flavours coming through, even dominating the flavour. Delicious!

bottle from Bièrerie Illkirch-Graffenstaden. Hazy golden, with a white head. Intensive aroma of hops, tropcial fruit. Full-bodied, intensive malty base that delivers loads of delicious fruity hops. Slightly grassy and resine, but mainly with tropical fruit flavours.

From tap. Pours clear and golden yellow with a small white head. Aroma is herbal,sourish. Sweet, sourish and light fruity. Lingering fruity and light citrusy into the finish.

From tap. Pours pitch black with a small tan head. Aroma is roasted dark malty and solid hoppy. Bitter, roasted and crisp hoppy. Bitter and lingering fruity. Dark roasted malty. Bitter and crisp hoppy finish.
