Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Yellow-orange color with hardly any head. Grapefruit, exotic fruits. Spicy yeasts. A hint of lactic acid. Taste is bitter oranges, more gapefruits fruity, refreshing. Light body, nice carbonation. Spicy and dry, like a Saison. One of the better Wits I?ve had.

Pours a very cloudy light brown color, topped with rather average-sized off white head. Slightly fruity aroma, more herbal and pine notes, hoppy. Taste starts with a minimal sweetness, followed by a very decent bitterness. Herbal aftertaste. Not as fruity and more herbal than some other IPAs, but still very nice.

A dark brown stout with a thin mocha head. In aroma, nice raspberry jam with light musty character, light acidity, pleasant. In mouth, a nice sweet fruity chocolate malt with light raspberry and soapy notes, OK. Bottle from Paris.

Clear yellow color with big white head. Grapes in the aroma. Reminds me of a light fruity wine. Nah, more grape juice. Tart taste, more grapes, apples, grains. Astringent dry sour finish. Very distinct taste, but I?m not sure if I like it...

Draught @ 6th Borefts Beer Festival 2014, Brouwerij de Molen, Bodegraven, Netherlands. [ As Mont Saleve Barbe Rouge ].Light unclear medium orange yellow color with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, grain, caramel, sweet malt, light to moderate hoppy, moderate yeasty, fruity. Flavour is moderate to light light heavy sweet and light to moderate bitter with a average to long duration, fruity, dusty hops, hay, dusty grass. Body is medium, texture is oily to watery, carbonation is soft. [20140927]

Keg at Borefts day1 26/09/2014. Bodegraven. Aroma is nice mixed tart fruits, raspverry, berry, cranberry. Clear dark caramel brown colorured pour with halo of off white head. Flavour is composed of nice fruit and chocolate character, raspberry, crisp cranberrry, Palate is crisp and refreshing. Very tasty.

Bouteille 33cl, merci Pierre. De couleur orangée trouble, col moyen fin blanc-cassé. Arôme au bouquet enivrant de thé vert assez prononcé avec un léger retrait houblonné. Le tout n’est pas sans rappeler un sac de pellettes de houblons. Palais est également renforcé au niveau du thé qui prend une belle place. Note un rétro-nasal rappelant presque le boisé cèdre ou la muscade. Belle surprise avec un thé qui est mis en évidence et trouve sa place avec un palais feuillus de thé vert. Petite note herbacée et une fine amertume des houblons tirant vers les agrumes ajoutent à sa complexité. Malt balance le tout avec un profil pâle et caramel. Le caractère du houblon raffiné en un beau fruité légèrement amer prend plus de place sur la fin et se marie bien au thé.

Keg at Borefts day1 26/09/2014. Bodegraven.Aroma is smoked phenols, TCP. A light hazed, golden coloured pour with a light white head. Flavour is malty, medicinal tcp, rauch malts, little caramel. Palate is medium bodied, moderate carbonation. Too much phenols.

Little cloudy deep orange beer, nice creamy irregular yellowish head, little stable, bit adhesive. Aroma: very interesting, smells like tea indeed, but not overpowering, bit funky, fruity notes, sweet, apricots, strawberry jam, some chemical touch. MF: ok carbon, medium body. Taste: very fruity start, citrus, quite some strawberries, funky, some grapefruit, tea bitterness. Aftertaste: bit soapy, lychee, fruity, bitter, tea, some citrus, more tea in the end.

Bottle sample at a tasting at kerenmk’s place. Thanks kerenmk. Dark brown with a beige head. Very peaty smoky aroma. Malty flavor, sweetish, with caramel, lots of peaty smokiness, some meaty smokiness and a dry finish. Medium-bodied. Very smoky, leaves your mouth feeling like an ashtray - pretty nice.
