Always experimenting and expanding

We brew in small batches in our 15 barrel brewery and we’re always experimenting with new recipes. Dan and Pat ,with previous experience from the wine world, get to marry the fascination with the natural world and the art and science of fermentation.

Dan keeps cooking up some good recipes and Patrick the builder keeps finding ways to add more tanks and increase our production.

Taster at brewery. Cloudy orange golden, thin silky head, lacing. Aroma is bready, citrus, tangerine. Taste is malty with citrus accents, bready, toffee. Really nice

Can from Julio’s just my slow climb up VT leaderboard. Cloudy yellow and sudsy white head. Nose is citrus. Tastes of lemony citrus little pinesol, dough. Creamy palate. Ok

Can. Cloudy orange with a good inch of dense white head. Some chunks emerge at the bottom of the can. Interestingly that last cm's aroma - from a different glass - is more expressive. Aroma of creamy orange - as you get when they juice the fruit skin and all - rambutan, mint, pandan custard. Quite sweet with lots of tropical fruit - mainly rambutans - lime as well as orange and a soft texture before a fairly bitter finish. Interesting and good but a little sweet for me.

Can day after super bowl. Murky orange. Nose is fruit bowl and zesty herbs. Tastes of pineapple, apricot, grapefruit, basil and oregano, soapy, some candy. Chewy. Low bitterness

Can, undated, from warm shelf at Total Wine, drunk 11/15/21. Moderately hazy, sunny orange-golden with tons of well-retained, white head. Light and crackery in the nose with hints of fruity and very gently bubble gummy yeast esters entertaining tangerine, soft mango and fresh squeezed OJ. No alcohol, flaw or big sweetness in the nose, nor punchy hop. Soft, malty, very dry and on the lighter-bodied side, but just fantastically flavorful and playfully fruity. Great balance - just enough bitterness without going overboard and tons of mango, meyer lemon, orange juice and even some light watermelon. About as good, and complex, an expression as you're going to get from this hop.

Undated can from Total Wine, shelf, though I think it has only been there a week or so, drunk 11/14/21. Moderately to heavily hazy, golden-brass with tons of never-ending, white head. Smells juicy, fruity, tropical, very complex, with tons of minerals. A touch of pine rounds it out and there's more lingering meyer lemon and lime. Really, really nice, with some strong cracker and biscuit from the malt, but low on the sweetness, hop twang and no alcohol noted. A great expression of Galaxy here. In the mouth it's juicy, heavily fruity, soft, malty and dry with ample tropical fruit but not too much mango-papaya and nothing ever growing punchy. Lots of pomelo, tangerine, meyer lemon, very light white wine and tons of earth and mineral. Lovely and extremely drinkable.

Pours a golden yellow with a thick white head. Aroma of guava, tropical fruits, melon. Taste has tangerine, mild pine, bitter citra. Palate has viney pine, lingering hop resin, more citra. Really good. Many thanks to the guy who handed me this beer while I hiked the Appalachian Trail - I hope you enjoyed your evening picnic.

Draught at Canary Square, 9/1/21.
Moderately hazy, pale goldenrod with a small, white head showing low retention.
Pretty dense/vague nose shows more doughy/bready malt than hops, honestly. I get that simcoe isn't the most explosively juicy, complex, tropical hop, but this is pretty minimal. Pine and various hard citrus notes with good mineral character from the yeast. No alcohol or flaw.
The vagueness of the nose continues in the flavor where the beer has almost no hop complexity. Some light white grapefruit and pine resin is about the extent I ever get. Soft, but bone dry with rather dull, bready/doughy malts. Just so little of any flavor here. Did not finish.

Can, courtesy of mansquito. Pours somewhat hazy orange. Biscuit, herbal, grapefruit, passion fruit, grain. Medium body. Fine.
