Backlog May 2009. Unclear deep golden body under a nice off-white head. Weak aroma, slightly metallic with hint of malt. Taste has light malt with hint of caramel, some fruit and slightly bitter. Medium body with a sweet and bitter aftertaste. Feels a bit out of balance.

0.375 l bottle from 'Het Huis van de Geuze', best before May 2045. A little hazy, golden with a medium large, slightly fluffy, slowly diminishing, white head. Sourish, rather fruity, gently funky aroma of overripe lemon, horse blanket, oak, some leather and hints of vinegar. Quite sour, rather fruity, gently funky taste of overripe lemon, vinegar, horse blanket, oak and some apple, followed by a medium long, fairly tart, slightly woody-dry finish. Medium body, rather astringent and gently effervescent mouthfeel, lively carbonation. Solid Geuze, a bit too acidic for ky liking.

Slightly sweetish, sourish, rather fruity, quite funky aroma of overripe lemon, gooseberry, horse blanket, oak and hints of vinegar. Minimally sweet, gently sour, rather fruity, quite funky taste of overripe lemon, gooseberry, some white wine, hay, horse blanket, oak, some apple and a touch of white pepper, followed by a medium long, quite tart, gently woody-dry finish. Medium body, quite astringent mouthfeel, average carbonation. Lovely fruit-forward Geuze, very refreshing, excellently balanced.

Sweetish-malty, gently fruity-floral, slightly yeasty-spicy aroma of banana, pineapple, quince, some vanilla and light clove. Gently sweet, malty, moderately bitter, gently fruity-floral, rather yeasty-spicy and a little grassy taste of grains, banana, honey, pineapple, quince and some clove, followed by a medium long, gently bitter, rather dry finish. Medium body, rather effervescent mouthfeel, average carbonation. Very pleasant Tripel, rather fruit-forward and dry.

One of three special geuze editions created for the tenth anniversary of the renovation of Villa Servais, a 19th-century estate in the Pajottenland region now operated by a couple as a B&B and cultural centre; two other geuzes were made for this occasion by Boon and Ambreus. Light gusher, so be warned, but it stopped abruptly too so this may have been related to temperature contrasts. Medium sized but slowly dissolving, off-white, tiny-bubbled, shred-lacing, breaking head over a hazy, apricot-yellow blonde robe with ochre-ish tinge. Aroma of unripe green plums, pickled onions, wood sorrel, apricot vinegar, old dry sherry, damp hay, sawdust, old oak wood, gooseberries, armpit sweat, stale lemon juice, cucumber soaked in vinegar, dry strawbales, grass silage, farmland. Spritzy, crisp onset, tart-fruity with impressions of sour plum, gooseberry and gherkin, but also a softness of ripe apricot somewhere - 'mals' is the right word here; minerally carbonation through a supple cereally, bready core, soaked in fruity sourness, lime- and gooseberry-like, rounded and refreshing with a yoghurty edge. Woody tannins in the finish, but also quite some funkiness, retronasally revealing itself as freshly fermented farmland (manure), sweat and mouldy citrus peel - adding a 'heavier' dimension to a generally bright, fruity, juicy geuze. Elegant blend, typical Herberg style, with both a refreshing fruity side and a 'darker' funky side. An entertaining yet still accessible, all-round geuze, enjoyed it.

(Draft at Akkurat, Stockholm, 13 Sep 2025) Golden colour with brief head. Fruity nose with funky yeast, oak wood, apples, citrus and sweaty socks. Fruity, tart taste with notes of oak wood, citrus, rhubarb, elderflower, funky yeast and barnyard. No bitterness. Medium body, dry. Complex and quite funky, with a generous woody acidity. Very nice.
